Lemon Meringue Pie Cannolis πŸ‹πŸ₯
These Lemon Meringue Pie Cannolis are a citrusy twist on the classic Italian dessert. With a crispy shell, creamy lemon filling, and a fluffy meringue topping, every bite is a sweet escape!

Ingredients
For the Shells:
12 cannoli shells (store-bought or homemade)
Powdered sugar, for dusting
For the Lemon Filling:
1 Β½ cups (360 ml) lemon curd
1 cup (240 ml) heavy cream, whipped to stiff peaks
1/4 cup (50 g) powdered sugar
For the Meringue Topping:
3 large egg whites
1/4 tsp cream of tartar
1/2 cup (100 g) granulated sugar
Instructions
1. Prepare the Lemon Filling:
In a mixing bowl, gently fold the whipped cream and powdered sugar into the lemon curd until well combined.
Transfer the filling into a piping bag with a star or round tip.
2. Fill the Cannoli Shells:
Carefully pipe the lemon filling into both ends of each cannoli shell, ensuring they are evenly filled.
3. Make the Meringue Topping:
In a clean mixing bowl, beat egg whites and cream of tartar until soft peaks form.
Gradually add sugar and continue beating until glossy stiff peaks form.
Transfer the meringue to a piping bag with a decorative tip.
4. Decorate the Cannolis:
Pipe meringue on each end of the filled cannoli shells.
Use a kitchen torch to lightly toast the meringue until golden brown.
5. Serve:
Dust the cannolis with powdered sugar and serve immediately for the best texture.
Tips:
Chill the filled cannoli shells before adding the meringue to keep the filling firm.
Add lemon zest for an extra pop of citrus flavor.

Blueberry Pie Cookies πŸͺ

These adorable bite-sized treats bring the flavors of a classic blueberry pie into a portable, handheld form. Perfect for parties or a cozy dessert night!

Ingredients
For the Blueberry Filling:
1 pint fresh blueberries
1 tsp lemon juice
1 tbsp cornstarch
1/2 cup granulated sugar
1 pinch ground cinnamon
1 pinch salt
1/4 cup water
For the Cookies:
1 prepared pie crust (store-bought or homemade)
1 large egg (for egg wash)
1 tbsp butter (optional, for a richer glaze)
Instructions
1. Make the Blueberry Filling:
In a small saucepan, combine the blueberries, lemon juice, sugar, cornstarch, cinnamon, salt, and water.
Cook over medium heat, stirring constantly, until the mixture thickens and the blueberries start to burst (about 5-7 minutes).
Remove from heat and let the filling cool completely.
2. Prepare the Pie Crust:
Roll out the prepared pie crust on a floured surface.
Use a round cookie cutter (or a glass) to cut out circles for the cookies.
3. Assemble the Cookies:
Spoon a small amount of the cooled blueberry filling onto the center of half the pie crust circles.
Top each filled circle with another pie crust circle and press the edges together with a fork to seal.
Use a knife to cut a small slit or "X" on the top of each cookie for ventilation.
4. Egg Wash:
In a small bowl, beat the egg with 1 tablespoon of water.
Brush the egg wash over the tops of the cookies for a golden finish.
5. Bake:
Preheat the oven to 375Β°F (190Β°C).
Line a baking sheet with parchment paper and arrange the cookies on it.
Bake for 15-18 minutes, or until the cookies are golden brown.
6. Optional Butter Glaze:
While the cookies are warm, brush the tops lightly with melted butter for added richness.
