These Lemon Meringue Pie Cannolis are a citrusy twist on the classic Italian dessert. With a crispy shell, creamy lemon filling, and a fluffy meringue topping, every bite is a sweet escape!
Ingredients
For the Shells:
12 cannoli shells (store-bought or homemade)
Powdered sugar, for dusting
For the Lemon Filling:
1 Β½ cups (360 ml) lemon curd
1 cup (240 ml) heavy cream, whipped to stiff peaks
1/4 cup (50 g) powdered sugar
For the Meringue Topping:
3 large egg whites
1/4 tsp cream of tartar
1/2 cup (100 g) granulated sugar
Instructions
1. Prepare the Lemon Filling:
In a mixing bowl, gently fold the whipped cream and powdered sugar into the lemon curd until well combined.
Transfer the filling into a piping bag with a star or round tip.
2. Fill the Cannoli Shells:
Carefully pipe the lemon filling into both ends of each cannoli shell, ensuring they are evenly filled.
3. Make the Meringue Topping:
In a clean mixing bowl, beat egg whites and cream of tartar until soft peaks form.
Gradually add sugar and continue beating until glossy stiff peaks form.
Transfer the meringue to a piping bag with a decorative tip.
4. Decorate the Cannolis:
Pipe meringue on each end of the filled cannoli shells.
Use a kitchen torch to lightly toast the meringue until golden brown.
5. Serve:
Dust the cannolis with powdered sugar and serve immediately for the best texture.
Tips:
Chill the filled cannoli shells before adding the meringue to keep the filling firm.
Add lemon zest for an extra pop of citrus flavor.
