Today’s creation from our organic kitchen: a four-layer gluten-free Belgian chocolate cake. Each layer is filled with decadent chocolate mousse frosting and covered in smooth white chocolate Swiss meringue buttercream. Today’s organic kitchen creation: a Bundaberg rum-themed number cake! The first cake features three layers of Madagascan vanilla, while the second is a rich salted caramel. Both cakes are filled and frosted with my signature white chocolate Swiss meringue buttercream, layered with homemade pecan praline, and topped with chocolate truffles, homemade macarons, meringues, and gourmet chocolate wafers. Today’s organic kitchen creation for Joey’s 21st! 🎂🎉 He’s had a Freddo Frog ice cream cake for every birthday, so I wanted to pay homage to that tradition in a big way for this milestone.

I made a 4-layer malted caramel cake, filled with salted caramel Swiss meringue buttercream and Freddo Frogs, frosted with white chocolate Swiss meringue buttercream, and topped it all off with more Freddos, sprinkles, Clinkers and a custom topper from Creating Mabel.

“Celebrating the beautiful wedding of my dear friends Nas Rus and Tyler Russell, who tied the knot on Saturday! 🎉 To create a variety of cake options (some of which aren’t ideal for stacking), I used cake dummies for the bottom two tiers and made six slab cakes for the kitchen to serve.

The chosen flavors were:

1. Lemon cake with homemade lemon curd and Swiss meringue buttercream.

2. Madagascan vanilla cake with white chocolate Swiss meringue buttercream.

3. Hummingbird cake with ricotta and cream cheese frosting.

4. Gluten-free and flourless orange and almond cake with ricotta and cream cheese frosting.

The wedding cake was beautifully finished with rice paper sails, lustre dust, edible glitter, and gold accents. A special thanks to Creating Mabel for the custom monogram topper!”
