Kimchi Chili Seafood Cocktail Sauce

Christmas in Australia always comes with prawns and fresh summer seafood.
This is my quick twist on the classic cocktail sauce, creamy with clean heat and a gentle lift from real kimchi flavour.
Perfect for prawns, seafood salads and easy Christmas platters.

Recipe
2 tbs mayonnaise
2 tbs Kimchi Chili Sauce
1 tbs lemon juice
A small pinch of salt
Add chopped celery or chives
Toss with cooked prawns, avocado, cucumber and cherry tomatoes.

Today is Kimchi Day in Korea and I feel incredibly lucky. Koreas leading agricultural newspaper Nongmin shared my story and the work I have been doing here on the South Coast bringing traditional Korean flavours to Australia. It was unexpected and very special for me so I wanted to share it with you too.

Nongmin wrote that kimchi has become a global food culture and introduced me as a Korean Australian maker continuing traditional fermentation abroad. The article shared how my first connection with Australia began in 1998 and that the flavours I grew up with shaped the way I cook today. It explained that I have been working to keep traditional Korean taste using the best ingredients available here without MSG or gluten and adjusting methods to match local produce.

The story mentioned that many Australians prefer well fermented kimchi and that interest in Korean flavours is growing. It also described the challenges of making kimchi in Australia including differences in cabbage moisture limited Korean chili products and difficulties sourcing radish and chives. It wrote that I continue studying fermentation when I return to Korea learning from traditional masters.

The article also introduced my kimchi based products such as kimchi chili sauce kimchi sauerkraut and dried kimchi seasoning created to make kimchi flavour easy to enjoy in daily cooking and noted that more products like kimchi flakes and kimchi spice are in development.

Nongmin reported that Mama Kims Kitchen received Gold for Traditional Kimchi and Bronze for White Kimchi at the Sydney Royal Fine Food Show Speciality Food Competition showing the strength of Korean fermentation in an international setting.

K Pop Demon Hunters Night for Olivia’s Birthday. We made the kimbap from the show, played the music, and everyone had a relaxed, fun time creating their own rolls. It was a great night. I hope the girls and the boys enjoyed it as much as I did.

Sold out again at Huskisson Market.
All the kimchi, white kimchi, and kimchi sauerkraut disappeared so quickly.
Christmas gift sets were a big hit too.

It was really special hearing how many of you are gifting these flavours to your family and friends for Christmas.
