Gimjang (김장) isn’t just about making kimchi—it’s a tradition to help us survive the winter and all year round. We’d gather seasonal ingredients—garlic, ginger, radish, crunchy cabbages, and fruits like pears and apples—and prepare them with care. Mum would lead us in salting, layering, and packing everything into jars, always with a little taste along the way. It wasn’t just about the kimchi; it was the joy of doing it together, knowing we’d have that love and flavour to see us through the cold months and beyond.

Hanjeongsik, a true feast for the senses, was today’s special treat from a dear friend. This traditional Korean set meal is all about variety and balance, showcasing seasonal ingredients across a spread of banchan (side dishes), hearty soups, rice, and mains. Each dish is thoughtfully prepared to harmonise flavours, textures, and colours. It’s a beautiful way to experience Korea’s culinary tradition and hospitality in its most elegant form.

I can’t thank enough the wonderful souls who’ve looked after me during my time in Korea. Their kindness and generosity have made this journey so much more meaningful, filling each day with warmth, care, and unforgettable flavours. Truly grateful for every shared meal, story, and moment.
