Papaya salad

- Some of your favorite herbs (goes well with mints)
- 1-2 fresh chili
- 1-2 garlic
- 1 lime
- dried shrimp as needed (I use my homemade dried shrimp)
- 1/2 fresh papaya
- 1 carrot
- a few sweet tomatoes
- a bit of roasted almonds
- 1tsp salt
- 2tsp fish sauce
- 1tbsp sugar

1. Soaked Shrimp in boiling water for 15 minutes
2. Smashes garlic and chili
3. Add lime tomatoes follow by salt, fish sauce, sugar
4. Add shrimp and tomatoes
5. Mix well then add papaya and carrot
6. Mix until well combine and serve

Making dried shrimp from scratch!

- 1kg prawn (I use wild caught)
- 2tsp sea salt
- 1500ml boiled water

- Clean and drain the prawns.
- In a pot, bring the water to boil.
- Put the prawns and sea salt in
- Let it cook for a few minutes
- Drain again and let it cool down
- Take the shells off
- Gently line them on a dehydrating rack
- Dehydrate in machine for 12 hours (alternatively, dry them under the sun)
- Should be dried after 12 hours and you can keep for our next video recipe!

Planning for your next event, we have some Asian food that you might like.

Our dumplings are made from scratch with pastry and filling. We grounded pork neck ourself in small batches. Pastry are made from scratch. Also our special own made sauce.

Summer Noodle Salad
- 1 carrot
- 1 cucumber
- 1 pack noodle
- Few pieces prawns
- 1 tomatoes
- 1tbsp dried shrimp
- 1tbsp sugar
- 1/2tbsp fish sauce
- 1/2tsp salt
- 1 lime or lemon
- 2 pieces garlic
- A bit of fresh chilli and dried chilli
- Mix herbs (mix mints)
- Fried onion and dried rose for garnish

In a boiling water cooked noodle for 2 minutes and set aside, now cooked prawn for 2-3 minutes and set aside as well.

In large bowl, shredded carrot and cucumber, added noodles, prawn, tomato, dried shrimp, sugar, salt, fish sauce, garlic, chilli, squeezed lime and mix well before adding herb. Lastly, garnish with fried onion and dried rose.

***This recipe is only my family flavour. You can always change any ingredients to suit your tastes.

Rice Paper Snack
- 10 sheets rice paper
- 1tbsp dried shrimp
- 1/2tsp dried chilli
- 1/2tsp chilli powder
- 1tbsp chilli oil
- 1tbsp garlic oil
- 1/2tsp salt
- 1/2tsp soy sauce

Cut rice paper into small pieces. In a pan on very low heat tossed the rice paper until slightly turned brown. Turned off the heat set a side. Dried shrimp finely grounded.

In a bowl, put rice paper, all the above ingredients and mix until well combined.

***This recipe is only my family flavour. You can always change to suit your tastes.
