It takes time, time to get the coals right, time to get the flame right, a mix of local wood and charcoal to get the perfect sear and flavour into our meat. Flavour is paramount along with perfected cooked output. Right tools are also important and for fire cooking we choose FireBarbie as our tool of choice.

Due to the staff accomodation crisis at Mt Hotham and Dinner Plain we have made the difficult decision to close the business over winter season 2023. We will remain open till end of May 2023 and re open in November 2023.

What an absolute cracka of a night to kick off all terrain bbq live at the snow tipi. Wonderful guests, great food including flame grillwd chicken chops, greek lamb, fermented garlic woodfired potatoes, homemade beef sausages for the kids, the most expensive lettuce salad in history and also a selection of deserts from our friends Wed night throughout the season or hit us up for a private event (min 10 pax) .hotham.resort

Lockdown Lamb, yep we are in lockdown v3 so time to experiment... 8 hr cooked butterfly lamb leg, finished on the along with steamed infused rosemary and tuscan garlic on the bbq... Can't wait to serve you again.. .hotham.resort
