Proud is an understatement for how I feel about yesterday.

Not only did we manage to pull off our first full day festival the size of Knox Fest, but I was joined by a team of amazing people that didn't even bat an eye at the idea of being a part of this day.

I'm so proud of what we all accomplished and can only thank the beautiful people that made it work. .sm, and stepped up and took over their roles before, during and after the day like it was nobody's business 💪

Of course I can't not thank the amazing .elizabeth too, who not only took charge up front on the day, but has also been the glue keeping me together in the days leading to the event, staying up late for multiple nights and pushing to make sure we were ready for what was to come. I wouldn't have survived without that amazing support ❤️

Also how good was having Z Grills Australia to play with there? Shout out to the team for allowing us to show off what these great units can do. They ran non-stop during the day and it made for a lot of fun as part of our special and while trying to hand over hundreds of kilos of meat to the public!

This was the biggest event we've had to date by far and it couldn't have been possible without all of you beautiful people that came up and tried our version of BBQ, you made it the day that it became and I am so thankful 🙌

Welcome to what could possibly be the busiest month of our entire business life!

I know I seem to be saying that every month but it just keeps growing 😅

So what have we got on for you??

First up today we will be spending all day at Knox Fest! This epic annual event is looking like an unforgettable one already and we're only just getting ready to get started! Head on down to Wally Tew Reserve today from 10am to get your BBQ fix at the Festival 🔥

Next week we enjoy the long weekend with a double header of a couple of our favourite markets.

On the 7th we're back at Brighton (as seen on TV 😉) to see how quickly you can sell us out there again for the final Summer market of the year! It's happening right along the beach at Green Point Reserve in Brighton from 5pm!

The next morning we return to our local highlight of the month that is the 🙌 we are lucky enough to have been called back for their Autumn season and can't wait to keep bringing back your favourite BBQ to Emerald! We'll be there on the 8th from 9am at Puffing Billy Park 🚂

The next week we're letting our friends at take the lead and work us to the rib bone at in Bendigo!
It was an amazing time working for this killer crew last year in Toowoomba so getting to do it on home soil in 2025 will no doubt be even more unforgettable 💪
PS. If you're at the festival and have a little wander, you may spot our one and only Leksi the smoker being put to work by a certain Grilla themed crew, just a tip for you 😘

Finally to cap off a truly epic month we bring it on back to Chelsea for the with quality hangs amongst some of legendary people and even better food to be enjoyed 👌 we'll be slinging the final que of the month from 10am on the 22nd at Bicentennial Park!

We officially have a new record. Knox Fest has put us at absolute capacity as the biggest single event cook we've ever had!

That means a couple things. Firstly, I have an insane day ahead of me. Secondly, that you have the absolute best chance of not missing out on our food on Saturday when you see all that has put on for you at the Festival.

Don't take the risk though and get there ASAP! Bell's Best Cuts has provided us with an insane amount of meat but this is everything we will have available and once it's gone it is gone!

So we shall see you from 10am tomorrow at Wally Tew Reserve friends 🎉

Special menu item revealed 🎉

Saturday at Knox Fest is going to be a special time, so to celebrate Bell's Best Cuts and I have been working on the return of our brisket sausage range!

We haven't had these on offer since our very first event almost 3 years ago! Using Wagyu brisket as a base, these little beauties are professionally packed with the perfect range of spices (and some with jalapeno and cheese too 😉), cold smoked and will be finished fresh on the day as part of our live Z Grills Australia demonstration happening under the marquee 🔥

Don't let the flavour profiles fool you, these will be amazing for the entire family, so make sure not to miss out on this limited special Saturday from 10am at Wally Tew Reserve, Ferntree Gully. The home of the Knox Festival!

The countdown is on, we are less than a week away from Knox Fest!

To celebrate we'll be bringing a full menu consisting of hundreds of kilos of meat contained in your favourite BBQ based boxes and sides the whole family can enjoy 🙌
On top of that, for something extra special we're also bringing along items that haven't been on offer from us for over 2 years 🤯

This is a huge day-long party that we are so excited to be joining for our first time ever! Entry is free and it all kicks off from 10am on the 1st, so make sure to have your reminders set up via our website and prepare for one serious party in Ferntree Gully 🎉

Our last time at was a crazy scene of incredible locals and many keen bellies to feed! To the point where we sold out before the market was even half way through 🤯

Now we can say we're lucky enough to have been invited back for their February market next weekend!

We have promised to provide more food and hopefully make it past the midway point this time (at least we'll try our best 😅). So put us to the test, prepare yourself for an incredible market and a heaping of meat from 9am next Saturday!

Have I possibly lost my mind and signed up for 3 markets in 1 weekend? Yes, yes I did. But it's going to be so much fun!

Next weekend we will be slinging your favourite BBQ between the beach and the Dandenongs with all the opportunities for you to feast on our meats 🔥

Starting on Friday the 7th we return to our OG market in Brighton for Soul Night Market where you can enjoy the market, quality dinner and a beachside view from 5pm!

On Saturday the 8th we are coming back to after a very quick sell out performance last time! I promise to bring more meats this time around for everyone hanging out in Emerald from 9am 💪

Then we bring it all home and hang out with all of the good people at Bonbeach Farmers Market on Sunday the 9th! It'll be the perfect way to finish up an incredible weekend from 8:30am 🎉

Safe to say we have a lot going on but we can't wait to see you all at any and all of the markets ahead! Looking forward to meating you beautiful people there 🙌

No messing around, we're in it to win it now 💪

Bell's Best Cuts loaded us up with more meats than ever before, and after some serious prep work we're now kicking off our biggest cook ever.

It's also only the first of two cooks for our weekend ahead! I'm trying to push the envelope of what we can do now and I'm excited for what will be our toughest test so far these next couple of days. Let's have some fun 🔥

Thermal Drone + Live Smoker = SCIENCE!

We recently had the luck of a drone being used on the property that happened to have thermal capabilities. So what better way to use it than by showing off a smoker in use?

You can see how well our steel beast is insulated comparing the heat of the fire box (the really red part) with the amount of heat being contained by the main barrel of the smoker and warmer box above it.
This was taken while the smoker was cooking at around 250°F, so safe to say it ain't chilly in there 😂

All around, this was just really cool to see! Thank you to the legend that took and supplied these great pics 💪

We are very excited for this one!

For the first time ever we will be posted up at the incredible next Saturday for their Twilight Market from 3-8pm 🙌

The entire rest of the year is fully booked for the Lost Woods as of this writing, so this may be the only chance you'll have to experience our brand of barbeque in Emerald this year!

Who wants some insider details on how our year has been?

I've been statisticing (definitely a word) and manage to pull together some numbers that even surprised me to be honest.

Firstly, our biggest events of the year came in with some standouts. Those being our insane Father's Day collab with Krispy's (unsurprisingly!), our return to Hop Hen Brewing for their Festival of Darkness which has become a yearly highlight for us, then the great surprise for us all at the time that was a hectic Good Friday at Hard Road Brewing Company 🔥
We've had a blast at all of these and the heaps of other events we've gotten up to over the last 12 months!

Obviously it goes without saying that we wouldn't be able to do what we do without our amazing local suppliers.

Bell's Best Cuts came through with over 1 tonne of meat this year! This includes nearly 900kg of Brisket and over 300kg of Pork Shoulder, not to mention the large number of random meats I've requested for Specials and my weird "science experiments" 😅 Liam from Bell's has made sourcing these meats an absolute breeze 💪

Now as proud Slaw providers we can't forget , who this year have supplied us with over 100 cabbages that have made up the base for our renowned healthy side! That's just the cabbage portion too, that doesn't include all of the carrots, celery and onions that are handed over with a cheeky grin and make up vital portions of our menu 🙌

Finally we need to thank all of you for sticking with us during this whirlwind of a year. I have so many people I will be thanking for a long time, but to everyone who has been a part of us either behind the scenes or with a box in hand and everywhere in between, you keep this crazy idea going and I am so appreciative for each and every one of you. We're another year down that has been bigger than I ever anticipated, so I won't even try to predict what next year will bring but I'm excited to share the ride with you all.

Now that, was a Christmas turkey 😍

I won't lie to you, this wasn't my recipe at all. But following recipe was the absolute right call for creating a tender, juicy, flavour packed turkey that will live on in infamy.

Not to mention the combination of using a top grade fresh turkey from the legends at Bell's Best Cuts, combined with the ease of cooking in a Z Grills Australia using my favourite Ironbark pellets from Smokin' BBQ Wood Pellets really made for the best chances to nail this thing 💪

I know this isn't a humble brag, but it feels good to finally pass the Christmas Turkey Test 🔥
