Meat getting loading into the pits ✔️

When we lost our daughter it became very obvious to us that we had grown beyond our capacity to cope with just Matt manning the fire… on that morning we lost $6k of meat as we had no one here to watch fire.

Fertility for us has been a very long challenge, what people who don’t experience IVF don’t understand is that your life gets put on hold. Working a regular schedule becomes impossible, everything depends on what the body wants to do when the body needs to do it. That means, last minute appointments and hospitalisations… the body doesn’t care if you have catering booked in or a fire on- it’s go time when it’s go time!

Forever thankful to now have Troy & Scott here helping allow us to leave for appointments as we continue to balance as a small buiz our personal life with our business life.

It was an absolute pleasure to meet and cater for Louise's 30th birthday this weekend! Getting to take care of an event like this is always a joy for us and we hope the food got to be a great part of the celebrations for everyone there 🙌

Troy has his own catering buiz and is often seen slinging his Que down at markets! We partnered up with him recently at Meatstock and are a big fan of his community approach to the BBQ world!

You know we're not ones to do things on the small side, so we had to ask the question everybody's wondering, "can the cook multiple briskets at once?"

Short answer, yes. Longer answer, yes, with ease.

We loaded up the Trimal S1 with two monster briskets from and put this rig to the Beard Street test 💪

The very first thing I noticed was the Trimal's extra height on the top rack, making it a breeze to fit that second brisket up there compared to squeezing it into the Z Grill previously.

The cooking method remained the exact same for any brisket I put in our 500 gallon offset, the only difference here being the rig used.

Not to be cheeky, but I certainly don't hate pulling off entire day-long cooks without needing to think about topping up wood, or
in this case 😉

We had a little shindig going on so the cook did include pork, which I threw into the 7OOE-XL along with the brisket fat that rendered into tallow. All in all the duo here made easy work of what would otherwise be a rather laborious cook.

As you can see from the photos if I was really game to do so, I could potentially fit some more goodies into the Trimal during this experiment, but maybe l'll save that for another day.

I cant deny it feels like cheating getting to cook brisket this way, but it works an absolute charm 👌

The new hotness has arrived 🔥

After 5 years of putting our Z Grills Australia to the test (and beyond), it's an honour to now have the Trimal Grill in our arsenal 💪

After learning about this project 6 months ago I have been so keen to see what the incredible team behind my favourite pellet smoker on the market were putting together. Safe to say it's impossible to be disappointed with the result.

This Trimal will be added to our crew both complementing our work out in the world and at home, utilising everything this all-in-one machine can do 💪

Long story short, I may be a tad excited for what we can do with this beauty! Now what to name it? 🤔

A classic meal that we took from years ago and haven't looked back since 🙌

The beef Bolar Blade is an underappreciated cut that is a perfect complement to low and slow style cooking, especially in the Z Grills Australia 🔥

Supplied by Bell's Best Cuts, lightly trimmed, rubbed in Smokey Joe's Rubs Outback and cooked from start to finish in the Z Grills 700E-XL. The meat spends a few hours at a smokey 210-250°F until the rub is set, then we boat it in beef stock, bump the temp to 275°F and flip the cut over every hour until it wants to fall apart in your hands.

This cut doesn't take too long to cook, so when it is finished we simply set the Grill to Keep Warm until the rest of dinner is ready to be served. When it is you'll have some top quality, fall apart in your grip Pulled Beef in your hands 💪

Now if you excuse me, I've got dinner to enjoy 😉

Next week we return to 8 Track Brewery for the first time since our killer debut in Ringwood for another night of Beers, BBQ and Bangin' Tunes! (this time featuring 🙌)
