*** The final results are in and Ribs we came 5th (tied for 4th with same score) out of 250 teams - feeling good finding this out as we sit down for dinner in Nashville***

Chicken we came 43rd which not too bad given we only cooked half chicken 3 times before the comp so ok with that and Brisket was way down the bottom where it deserved as that was our fault for slowing it down during the cook then not getting it finished in time. The cook is over and for 257 teams from across America and some international teams we made the Top 10 Finalists in Ribs - Extremely stoked!
Not quite sure where in top 10 yet but pretty happy!
And the 2 main rubs used were Australian big flavour punch from Smoke Chamber BBQ Pork Pat down and Four monkeys BBQ Homebase and Pork Injection - Go Aussies!

First full day in Austin Texas before we head to Houston and of course we had to go and visit and we managed to get around 12th in the line waiting for the door opening and can say the food was awesome. We all loved the Turkey probably because we rarely have it at home but will be a staple now.

Well that is a wrap for all the December pre Xmas Event Catering - Our Smokers - Stumps, The Duke, Woody, Captain T and Joe have had a good work out with The Duke even having a guest pit master in Dave from the Foo Fighters and Andrew Kavanagh cook on him earlier in the month.
December in 22 days we have smoked
790 kg of Brisket ☑️
680 Kg of Pork Collar ☑️
1,200 Wings ☑️
50 Racks of Ribs ☑️
Heaps of Mac n Cheese and a heap of Hotlinks

It’s been a minute since we last had some Brisket Birria Tacos - Really should make this more often came up a treat using the Black Joe Drum and the flavour from the charcoal and pecan wood was great. A quick visit to Low 'n Slow Smoke Off - Gerogery, NSW which for us is a local competition given its only 4 hour drive and ran by awesome people fantastic event.
We were happy with some of our results
* 1st Place BRISKET - with a perfect 300 Score ✅
* 2nd Place Pork RIBS
* 2nd Place CHICKEN

Finally back from a 2,500km round trip to Port Macquarie Australian Barbecue Association Invitational & Open rounds. For the Invitational of top 30 plus teams we finished 8th Overall with Brisket being the best with a 6th.
On Sunday again 6th in Brisket and 8th in Chicken but our ribs let us down.
As always our 2 Pits were fuelled by lump charcoal & Pellets.

Finally home after a 2,300km round trip to Smoke in Broke NSW and although not all categories went as well as we hoped we were very happy with our 1st Place Chicken with a perfect score from all judges.
The chicken was sourced from Char Char Char butchers cooked on the Camp Chef Australia Woodwind Pro using Heat Beads BBQ Pellets.
Big congratulations to Butterbeard BBQ for RGC and Big smoke bbq for Grand Champion win.
