Pork belly + apple + fennel .
Twice cooked cider braised pork belly from Rob at Casalinga, who gave me the intel on how his pigs are raised, with a reduced barbecued apple sauce, and a little apple and fennel foam for sweetness. Toasted cumin to finish. This is a good kind of pig 🤍
Yesterday was the day for birthdays and anniversaries - happy anniversary Jason and Terri 💕 and happy birthday Eden and Liv! 🍦
Now… we all know I like a challenge by now, and I’d be lying if I didn’t say we joked about captioning this “I double dog dare you to send me your dietaries” 😆 pictured platter: gluten free, dairy free, egg free, legume free, nut free, and garlic free - go on, you know you can 🤍

Lunch things… Mum’s chocolate fudge slice was a huge hit growing up, it never lasted and was sporadic in its baking, for all its glory. Sorry Mum, we made it GF. The Cardomom friand might be a new fave… with freeze dried blueberries and thyme 🤤
As we come into Spring, we’re gearing up for Summer - yep, you read that right! Spring - let’s pretend we’re closer to summer? ☀️☀️☀️😆 I shouldn’t say that because I love the poetry that comes with a change in seasons, it brings new life, new energy, and a change is as good as a holiday right?! (I don’t want a holiday from you though). So, adding hours to trial is next on the list whilst we continue to sort through emails and liquor licensing info 😉
On this weekend are some newbs and some old favourites, we’d love to see you emerge from winters hibernation and come say hi. 🤍🤍🤍
Where it all started ✨
1FoodAU began as a recipe test kitchen on the back of a go at MasterChef, it was all about creating recipes that were gluten free, dairy free and sugar free variations and curations of old and new. Flash forward from 2014 where it all began and 1FoodAu is now the parent of The Kitchen Collective and Co restaurant. Who would have thought it would come this far - on reflection, I didn’t imagine this is where I would be and what I’d be doing, but I absolutely love it.
I was flicking back through the first print of my recipe book a couple of days ago, and 1Food will always be where it started because of its vision - to bring people together to share a love of food no matter what their dietary needs - macro, postpartum, gluten free, dairy free, 1food : one whole.
So what began as an idea grew into a solution for anyone looking for prepared meals, from tailored macro friendly meals and postpartum for new Mums to large scale catering packages for companies.

Some serious concentration for our gluten free caramelised onion, saltbush and walnut tart 🙈 we’re trialling some extra hours over lunch for the next few weeks, with some fun lighter options that can you can pop in for or package up. This one’s homemade gluten free Shortcrust, caramelised onions mixed with Tasmanian walnut crumb and shaved Elgaar farm saltbush cheese. It pairs perfectly with our warm winter veg salad using some beautiful produce from the region and our confit garlic labneh. 🤍

We’re a little over six months in now and the realisation struck this week, staring down the next peak season and questioning a quiet and cold winter - these are the things on the minds of anyone trying to run, build or sustain business in escalator industries like hospitality. I use the term escalator, because they rise and fall with society, with societal pressures, the reality of the cost of living and what we perceive value in. I’ve seen and heard so many stories in our city of gastronomy of businesses closing and I’ve personally wondered if this is sustainable, but with that said, with dark there is always light - maybe there’s some inflection of raising a toddler through it too 🤔
As I scrubbed down the kitchen this week, in a fleeting moment remembered what it was like preparing to move in - this season has been a reflection of how far we’ve come and just how much further we have yet to go, to discover, and everyone that has supported this - the beautiful people that religiously supported, travelled, followed, returned, discovered - it’s like they (we - I perhaps once said) say in real estate “the market sets the parameter of interest vs value”… fancy this, a few months ago I was scraping grease and this week we’re writing menus and talking to producers about produce and parties. Far out 😮💨

Crazy to be saying it’s been FIFTY whole days of Fitz 🙈🙉 Finally replaced my tea cup wine for some real glasses. 🥂It’s been incredible to see the transformation of this space into something that is an extension of myself, that I can invite you into to share an experience together - soon 🤍 There are now tongs galore - if you know you know 🤣 I am eternally grateful for the incredible community that is Westbury and small businesses supporting one another, it’s exciting to see what we can do together ✨The oven door did come up clear, a few hours later 😆 we also set fire to the back of the stove, accidentally. I stand by the statement that it helped loosen the grease 🫣🤔And, after an enormously busy period, I’ve finally had a week to take five - recover - plan, and reply to the council!! 🙉 Be the energy you seek 🤍🤍🤍 Co. is coming soon. ✌️

Bread goes first for layering, anything with height next, and I will never garnish a dip before it’s transported ever again 🤣 this is generally how it starts out, to how it finished (see pic)… but here it just wasn’t all going to fit, so we picked the table up half made and turned it! 😆This was for a private event at Love Lucy Boots, an intimate venue just out of town.
