Country Cantinas runs a beautifully converted horse float which has been lovingly named "Charlie". Charlie is a mobile bar that specialises in serving drinks that have been provided by the event organiser, we do not supply or sell alcohol at this stage. We cater for all occasions and events, however weddings are our specialty. So sit back, relax and let us bring a little piece of country to you, a

Nothing says Christmas in a glass like a deliciously refreshing Watermelon Margarita!!

From our family to yours, we’d like to take this opportunity to wish all our close friends and family, our followers, and past and future clients, a very Merry Christmas and an amazing 2025!

Watermelon Margarita
45ml Tequila
15ml Lime Juice
15ml Simple Syrup
15ml Watermelon Juice
Opt: Jalapeno Simple Syrup for a little kick (see our previous post for how to make jalapeno simple syrup)

Garnish: Lime Wedge and Watermelon

Place all ingredients into a shaker with some ice, shake 10-15 seconds and strain into glass over fresh ice. Garnish and enjoy!

Tip: use a blender if making large batches for a party. You can also add a good amount ice to the blender if you’d like a frozen margarita option!

For those who like a little spice in their life! Another great cocktail to add to your Christmas menu! Bulk batch your simple syrup and pre slice your jalapeno slices for a quick and easy drink!

Our Spicy Margarita recipe is the perfect balance of heat and deliciousness that is sure to please everyone. Adjust the heat to suit your taste and tolerance.

Spicy Margarita

30ml Tequila
30ml Triple Sec
30ml Lime Juice
15ml Simple Syrup
15ml Orange Juice
2-3 Jalapeno Slices (optional)

Garnish:
Tajin seasoning, lime wheel and jalapeno slices.

For an extra kick of heat add optional 2-3 slices of jalapeno to a shaker and muddle. Then add Tequila, Triple Sec, Lime Juice, Simple Syrup, and Orange Juice.

Add everything to shaker with ice, shake 10-15 seconds then double strain into glass with fresh ice.

Rim your glass with Tajin seasoning and add a lime wheel and sliced jalapenos for garnish.

To make simple syrup. Heat equal parts sugar and water on the stove and simmer for around 10mins until syrup thickens. Pour into bottle or jar and set aside to cool.

TIP: if you know everyone will like alot of heat, you can add jalapeno slices to your simple syrup during the cooking process.

How Christmassy does this beautiful blackberry mojito look?!?

Perfect for your Christmas event and can be served as a mocktail for your designated drivers and underage guests by just omitting the rum.

Tip: Batch make the simple syrup agead of your event to save you time in the kitchen. Simple syrup will last in the fridge in an air tight container for up to a month.

Ingredients:

60ml white rum
1/4 cup blackberries
30mls Simple Syrup
30mls Lemon Juice
5 Fresh Mint Leaves
Soda Water

Method:
Add simple syrup, blackberries, lemon juice and mint leaves to a tall glass and muddle. Then add rum and a handful of ice to the glass and top with soda water.

Simple Syrup - gently heat 1 cup of sugar and 1 cup of water in a saucepan on the stove until sugar has dissolved. Set aside to cool and add to drinks as needed.

Banoffee Pie shot - I mean, caramel, banana, cream. I have a sweet tooth so this is one of the yummiest and most decadent shots Ive had in a while. It’s dessert in a glass!

Give it a try this weekend! Warning: make a double quantity, you’ll need it!

Banoffee Pie Shot

1 part Caramel Vodka
2 parts Banana Liqueur
2 parts Cream
Drizzle of caramel

Rim the shot glass with caramel and crushed biscuit. Mix all ingredients in a shaker with some ice and shake for 10 seconds.
Strain into shot glass and top with whipped cream, caramel drizzle, a slice of banana and choc shavings.

Enjoy, and then pour yourself another because you can’t stop at 1!

We think this Orange Blossom cocktail tastes as brilliant as it looks! And as the weather warms up here in Aus, it is sure to be a refreshing crowd pleaser!

Orange Blossom

60ml Gin
30ml Triple Sec
60ml fresh squeezed orange juice

Garnish: Orange Wheel

Method:
Combine all ingredients in a shaker with ice, shake vigorously for 30 seconds. Pourin to glass over fresh ice. Enjoy!!

Espresso Martini

30ml Vodka
30ml Mr Black
30ml Espresso Coffee
15ml Simple Syrup

In a shaker with large ice cube add all ingredients and shake 15-20secs. Strain into a cocktail glass. Enjoy 🍸
