☕ We bought a cafe in the heart of Mandurah, right on the foreshore! Couldn't be more happier!

😛 Come check us out sometime .... it's where you can still get our cheese kransky sausages, loaded fries and those much loved seasoned chips. But now also (but not limited to):

The Trailer:

Comprised of heavy duty steel, built to travel Australian roads and serve the masses anywhere.

Independent off road rocker suspension, with 1400kg rims and tyres to suit.

Built for not only travelling but also heat conduction and warping in mind. As the smokers fire box and chamber heat up, expansion causes the main chassis to flex, the smoker is set perfectly to slow the flex and allow it move freely with out compromising the structural integrity of the trailer.

Oversized draw bar also designed to handle the work load and Aussie road terrains.

The Chamber:

Made from custom rolled 6.5mm steel

4 chambers at 1200w each containing cooking racks.

“Warming Box” is 1300w with 6 racks. Ability to cook and smoke also in here, with slide gates internal to control temp.

Huge fire box, designed for capacity and fire control. Adjustable air grates, to allow the long cooks without too much fuel use.

Twin oversized stacks to the main chamber, allowing for draw and create the cleanest of smokes.

Single compressed stack to the warming box to help contain a moderate heat or a fierce and fast heat when requires.

No need for water panning or spritzing as the reverse flow design accommodates the moisture made by the protein. Spritzing can be done at shows but is only really done for the effect and meaty smell.

Back of House:

Back of house consists of 3 stations:

1) The Grill -

1200mm S/S Heatlie gas BBQ, the absolute best!

Smash burgers by the dozens, non stop and no excuse for falling behind during service. This station is not for the faint hearted though, located behind the fire box and keeping up with the crowds coming to witness “BRUCE” in action, you’ll need to know what a hot box feels like to appreciate working in the space.

2) Prep Bench -

With 2400mm of stainless bench there’s not much that can’t be done here. Handling shows and the work load this area is essential to your BBQing and keeping up with demand.

3 large lockable S/S storage drawers underneath, this area is super versatile and caters for the storage of knives and disposable gloves, tools of the trade and anything else you’ll need.

3) The Wash Up Area -

3 x extra large pot sinks with instant hot water at your disposal!!!

Makes cleaning on the go an absolute breeze and keeps the local health officers happy at your every event.

Easy access to piping, water pump and a bit of extra storage under the sinks for cleaning chemicals.

With all this, the back of house can be covered with a 6mx3m gazebo and should be floored using tarps.

At the front, we used a 3mx3m gazebo to serve from adding to the effect of an actual stall.

📣 PUBLIC SERVICE ANNOUNCEMENT 📣

And here we are …

May we start by saying ‘shank you’ so very much to all our followers, repeat customers, suppliers, event organisers, fellow vendors, family, friends and staff …

We’ve seen some highs and some lows! Unfortunately the time has come to say good bye.

With Cons continued heart conditions and Mel’s continual over exertion and stress levels, we are announcing the closure of Up In Smoke.

The business is not for sale but the gear is. All must go! Tow truck, food van, giant smoker trailer, catering equipment, generators, meats. The lot!

It’s been a fun 7 year ride and we thank each and every one of you for your support in our small family business.

You’ve listened to us, you’ve cried with us, we’ve watched you create families of your own, we’ve watched your kids grow, we’ve catered your weddings and your birthdays and weekenders too!

But now the time comes for us to focus on ourselves and do what’s right for us.

Once again, thank you … you’ll see us again I’m sure. And hopefully you don’t forget us.

Hi Kalgoorlie!

We make this post as most of you are probably wondering what’s happened, why have we cancelled trade …

On Tuesday 9/4, our first nights trade, we had a massive turn out … thank you! This is so humbling but also so very stressful especially when orders are so big, not only that but very daunting when you’re all looking at us working so hard but you’re having to wait to get your food. We understand your frustrations but we also thank you for your patience.

At about 7:35-7:45pm, after Con had brought in some more pulled pork, as Con turned around he had a cardiac arrest and collapsed on the back deck of the food van.

After a minute or two Con awoke from his episode and was taken away by ambulance for observation.

Mel and Teagan then had a lengthy nights clean up ahead of them! She’s not an easy rig to set up nor pack up!

Con is in a lot of pain from his fall and we have since then been at resting at our Airbnb.

Unfortunately, Con is too sore to trade. There’s a lot of heavy lifting involved and Con is in no condition to be doing that. And Mel obviously is a lady and just can’t lift those sorts of weights.

So Kalgoorlie, we are sorry but we’ll be cancelling today and tomorrow too.

We hope you understand, send some compassionate thoughts and respect our privacy at this time.
