Lovely for Anzac Day with a cuppa or spread with some butter, or icing....enjoy!

ANZAC BREAD

2 cups of self raising flour
1/3 cup of caster sugar
1/2 cup of shredded coconut
1/2 cup of rolled oats
2 eggs
180ml of milk
100g of butter
150ml of golden syrup

Icing
2 cups of icing sugar
50g of softened butter
2 tablespoons of golden syrup
2 tablespoons of milk
1/2 cup of shredded coconut

Preheat oven to 170' grease and line a large loaf tin with baking paper. Making sure to leave an overhang for easy lifting out. Melt the butter and golden syrup together, mix and set aside to cool. In a bowl add flour, sugar, oats, coconut. Whisk to combine. Add the eggs and milk to the cooled golden syrup mixture. Whisk to combine. Pour into the dry ingredients and mix until just combined. Spoon into prepared pan , level top and bake for 40-45 mins or until skewer inserted comes out clean. Cool in tin for 5 mins, then lift out and cool on a wire rack. When cool ice with icing.
To make icing - add butter, icing sugar, golden syrup, milk. Beat until light and creamy, fold through the shredded coconut. Spread onto cake. Slice and serve plain or spread with butter.

We have our own bee hive and therefore our own honey...yep...yum!
So here's a little dessert I'm whipping up tonight and I thought I'd share!
Different amounts too for catering if your having guests over! Enjoy!

What do you do when you're asked to cater for a 18th...but your going away that day to a family thing!!! You prepare everything and deliver it on time and the lovely hosts agree to set it all up with the platters and pictures you provide...lol. Every container is labelled and when I dropped it all off I set it out in sections how it slotted together with bickies etc. I must say...I was impressed, let alone my clients where, with my efforts...lol.
Hope their party went well!

Christmas candy cane biscuits ❤️🤍
Easy peasy - Arnott's Biscuits Milk Coffee biscuits (who doesn't like the scalloped edge pattern! You could use any shape biscuit) M&M’s (use the Christmas green & red pack in the supermarket) mini white marshmallows (cut them in half) ✂️
Ice the biscuits & place / alternate the red & white in a candy cane pattern🎄
