Melbourne’s first Italian artisan sorbetteria.

This is our story and what we do with passion.

An amazing journey started in 2008 while sharing my passion for the authentic Italian gelato among clients and friends. A passion that became an obsession in researching the best possible way in trying to make it as natural and good at the same time. And so finally I started in 2019 after years of research, study, and testing. My idea? Keep alive the authentic way to preserve the freshness of our Italian artisan gelato by using the traditional “pozzetti”, stainless steel cylindrical containers deep inside our freezers covered with lids. Although we cannot see the sorbets, there are many advantages to using the “pozzetti” system. Gelato and sorbet are generally at its best the moments when they come out of the machine. After this point, the gelato slowly oxidizes and begins to lose flavor and freshness. The “system of “pozzetti ” that I have integrated into my freezers keeps the gelato in the best possible state maximizing its freshness and taste without the need for preservatives. This is particularly important since I use only high-quality ingredients and nothing else.

Then I agreed on the fact that our classic natural fruit flavors deserved to be prepared using the Italian “old-style” recipes because my vision is to recreate here in Melbourne not only a premium product but also a gastronomical experience of the Italian tradition. I deeply trust that our valued customers, deserve to enjoy the same high-quality product available in the best Italian “Gelateria” this is granted by the certification of 100% Italian artisan gelato and by being a member of the International Federation of pastry gelato and chocolate.
