Happy birthday to me 🎂
So I couldn’t or wasn’t allowed to cook today! So how did I celebrate SlowSeven today? Well, wifey took me to where the chef is the master of slow food and farm to table. She beautifully gave us nibbles of smoked jerk pork belly, pineapple chow with shrimp and their amazing local bread. Thank you guys and to my beautiful wife .astra

SlowSeven Day 2:
Purple Sweet Potato Gnocchi with brown butter and chives. Simple and sweet.
Tbh it’s the first time I have made sweet potato gnocchi, baked the potatoes and used egg yolk and flour to thicken. Rolled them out, cut and blanched. Then pan fried in a little olive oil and removed from pan. Then whisked some butter to a brown froth in the hot pan and reintroduced the gnocchi with a little chive and aged cheese, also from 😂 see what going on here???
I had this with a rocket salad from with a little lime dressing.
Cawwwwbeln! Went down good :)

Cassava and Buttermilk Pancakes with Dragon Fruit and a Bajan Lime Syrup.

Ramen stock, rolling boil.
As a European chef we are trained to gently boil stocks to have clarity and delicate flavour.
However when it comes to ramen broth it’s all about the rolling boil to break down fat and gelatine. That broth needs to be a thick milky colour.
This broth here is only 5 hours in, should be perfect in another 15 hours or so!
