Kimchi experiments:

1st: Zucchini & Carrot, based on a recipe for Oi-sobagi or cucumber kimchi. Perfect after 24 hours.

2nd: Fennel, which doesn't like to ferment well due to antibacterial properties. Added some ginger bug, ferment for 7 days at room temp and 2 weeks in a colder environment.

3rd: Kohlrabi, based on a turnip kimchi named Kkakbugi using pears to kickstart the ferment. Smells like farts but taste amazing.

4rd: Beetroot & Apple. Took quite a while to fully develop, oh but when it did 🤤.. Next time we're making clams, this will be the base.

On a side note, chicory is absolutely not suitable for kimchi. Experiments do fail from time to time. If anyone did make it work, please let me know!

When we did our valentines menu, nobody ordered the beers that where available. That gave us the brilliant idea to make a menu where the beers are included so you have to get them! *evil scientist laugh*

So we present to you:
"THE BEERPAIRING"

A four course menu paired with three beers to share. (obviously you can also order your very own beer)

A vegetarian option is available in the webshop. Also available are non-alcoholic beers but like, come on.. (they are really good though)
