In separate bowls, place flour, beaten eggs, and a mixture of shredded coconut and panko breadcrumbs.Season shrimp with salt and pepper.Dip each shrimp into the flour, then the egg, and finally the coconut-panko mixture, pressing gently to adhere.Heat oil in a pan over medium-high heat and fry shrimp until golden brown (about 2-3 minutes per side).Remove and drain on paper towels.Serve with sweet chili sauce for a delightful dip!
