Hello TOTC family. It has been a while since I connected, sorry I will try to do better; (I am not really a social media person). The journey to get a fully functional, up to code kitchen has been wild. For example, it took more than a year to get the exhaust system in, and then 3 months to get gas equipment hooked up, and that is still not quite done. Of course the cost is still COVID pricing, so lots going out not enough coming in. Saying all that, I am still cooking on a regular 30 inch electric stove; trying to give you guys the flavour and variety that you expect.
Anyway, enough of the pity party. I am excited to say that our signage is going up soon, and Soups are back on the menu. In addition, we are expanding the bake goods with some fall flavour.

Hello TOTC family. Hope you are all keeping cool. We will be closed early on Friday and all day Saturday. I am taking a well deserved brake and going GLAMPING FOR 3 DAYS. I am looking forward to having nothing to do.

Hello TOTC family. We SURVIVED!!! We went, we cooked, and we conquered the hearts and stomachs of all in attendance! In the span of 48 hours, we prepared, cooked, and served: 400 LBS of Curry Chicken, 500 LBS of Oxtail, 350 LBS of Jerk, 50 LBS of Rice and Peas, 75 LBS of Basmati, 160 LBS plantain., and for dessert 28 tray of Mango cheesecake. We topped it off with enough Cucumber salad to feed 1200.
