Winter Warmer: Hearty Italian Minestrone Soup
As the chilly winter winds start to howl, there's nothing more comforting than a warm bowl of hearty soup. This Italian Minestrone is the perfect dish to keep you warm and satisfied on a cold winter's day. Packed with a variety of vegetables, beans, and pasta, this soup is not only delicious but also incredibly nutritious.
Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes
1 (28-ounce) can crushed tomatoes
6 cups vegetable broth
1 cup dried ditalini pasta
1 (15-ounce) can cannellini beans, rinsed and drained
1 (15-ounce) can great northern beans, rinsed and drained
1 cup chopped kale or spinach
1 cup chopped broccoli florets
1 cup chopped cauliflower florets
Salt and pepper to taste
Freshly grated Parmesan cheese, for serving
Instructions:
Sauté the Veggies: Heat olive oil in a large pot over medium heat. Add onion, carrot, celery, and garlic. Cook until softened, about 5 minutes.
Add Flavor: Stir in oregano, basil, and red pepper flakes. Cook for 30 seconds more.
Combine Ingredients: Pour in crushed tomatoes, vegetable broth, and ditalini pasta.
Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until pasta is cooked.
Add the Beans and Greens: Stir in cannellini beans, great northern beans, kale or spinach, broccoli, and cauliflower. Cook for an additional 5 minutes, or until vegetables are tender.
Season and Serve: Season with salt and pepper to taste. Serve hot, topped with freshly grated Parmesan cheese.
