For their main our clients enjoyed a confit herbed chicken leg with home made gnocchi in a saffron cream sauce and for a dessert a strawberry panna cotta with lemon curd and sugared raspberry

We’ve been humming about a beautiful focus on Italian food and Wine since we started working together - not only is it a mouthwatering cuisine, but Chef Tim trained for some time in Italy and has a particular love for their comfort and flavours.

WOW, what a night. ❗️ Recipe Alert ❗️

Happiest of birthdays to our amazing client Chelsea, we hope you enjoyed this four course meal!

Course one - Lobster Bisque
Course two - Honey carmalized pear and Burrata salad
Course three - Mediterranean Basa En Papillote with couscous
Course four - Espresso chocolate cake, pistachio cream cheesecake, raspberry jelly and white chocolate whipped ganache.

Pistachio cream pictured in the jar, I highly recommend making this for desserts, it’s definitely a labour of love but absolutely delicious with pastries or over ice cream!

160 grams pistachios deshelled
Add into boiling water for 4 minutes
Drain and place on tea towel
Fold tea towel over pistachios and rub to loosen skins
Separate all skins from pistachios and put pistachios in a food processor
Add 1.5 TBS icing sugar
Add 1/4 cup milk (add 1 tbs more if paste is to thick to blend)
Blend for 4 minutes or until paste is formed, scraping down the sides 2-3 times during process

In a sauce pot add 1/2 cup of milk, 11 grams white chocolate (about 1 cup if using chips), 2 TBS of butter or 30 grams. Heat on low-medium heat

Melt together and pour into the pistachio paste. Blend until smooth, store in refrigerator for up to 2 weeks!

Appetizer - Black sesame tuile with herbed goat cheese and a side of roasted beet salad with a dijon honey vinaigrette

Main - Red wine braised beef, cauliflower purée, roasted rainbow carrots, pickled shallot pedals and a white truffle and parmesan scalloped potato rose (so fun to make)

Dessert - Baked meringue filled with passion fruit curd and white chocolate mousse, topped with dried raspberry powder and lemon zest (p.s this dessert is gluten free 😍)
