👉🏻 Did you know there are different ways to prepare barbacoa in Mexico?

Here are four of the most common methods:
1.⁠ ⁠Hidalgo: know as the heart of Mexican barbacoa, it's traditionally made with lamb. This traditional method involves creating a pit in the ground filled with hot coals, overlaying maguey leaves on top and wrapping the barbacoa to steam for hours until slow cooked to tender perfection.

2.⁠ ⁠Mexico city and neighboring regions: Lamb barbacoa is also most popular in this region and is often served with consome, a broth made from the meat juices during cooking.

3.⁠ ⁠Northern Mexico (Ay Chihuahua!): Beef is more commonly used in the parts we’re from. A variety of cuts are used, such as cheek, lip, and bone to give it that signature buttery consistency and mouthwatering flavour.

4.⁠ ⁠Southern Mexico: In this region, chicken or pork pibil barbacoa is more common, a technique that involves marinating the meat with achiote and cooking in a hole in the ground while wrapped in banana leaves.

Here's the recipe for our homemade corn tortillas.
This recipe is easy to make with just 4 ingredients and yields the most delicious, soft tortillas for your barbacoa.

INGREDIENTS
- 2 cups corn masa flour
- 1 1/2 cups hot water
- 3/4 tsp sea salt
- 3 tsp vegetable oil

PROCESS

1. Mix the dough:
- In a bowl, mix the corn flour with warm water.
- And vegetable oil.
- Add a pinch of salt if desired.
- Knead the mixture until it has a smooth and pliable consistency.

2. Shape the tortillas:
- Divide the dough into golf ball-sized balls.
- Place a ball between two sheets of plastic or wax paper.
- Using a rolling pin, flatten the ball into a tortilla of the desired thickness.

3. Cook the tortillas:
- Heat a skillet over medium-high heat.
- Place the tortilla on the hot skillet and cook each side for about 30 seconds to 1 minute, or until bubbles appear and they are lightly browned.

4. Serve and enjoy:
- Remove the tortillas from the skillet and place them on a plate covered with a clean cloth to keep them warm.
- Serve the tortillas with your favorite ingredients and enjoy your delicious handmade corn tortillas!

Les compartimos la receta de nuestras tortillas de maíz hechas a mano.
Esta receta es fácil de hacer con solo 4 ingredientes y produce las tortillas más deliciosas y suaves para tu barbacoa.

INGREDIENTES
- 2 tazas de harina de maíz
- 1 1/2 tazas de agua caliente
- 3/4 cucharadita de sal marina
- 3 cucharaditas de aceite vegetal

INSTRUCCIONES

1. Mezcla la masa:
- En un tazón, mezcla la harina de maíz con agua tibia.
- Agrega el aceite
- Agrega una pizca de sal si lo deseas.
- Amasa la mezcla hasta que tenga una consistencia suave y maleable.

2. Forma las tortillas:
- Divide la masa en bolas del tamaño de una pelota de golf.
- Coloca una bola entre dos hojas de plástico o papel encerado.
- Con ayuda de un rodillo, aplana la bola hasta obtener una tortilla del grosor deseado.

3. Cocina las tortillas:
- Calienta una sartén a fuego medio-alto.
- Coloca la tortilla en la sartén caliente y cocina cada lado durante aproximadamente 30 segundos a 1 minuto, o hasta que aparezcan burbujas y se doren ligeramente.

4. Sirve y disfruta:
- Retira las tortillas de la sartén y colócalas en un plato cubierto con un paño limpio para mantenerlas calientes.
