Kumato tomato’s and burrata cheese caprese salad paired with Rosehall Run Vineyards Inc Chardonnay. 2nd course filet with mash and lemon garlic Swiss chard and mash potatoes paired with Karlo Estates 2018 quintas. and for dessert; key lime pie with dragon fruit, kiwi, blueberries with ginger lime whip cream and Icelandic chocolate dust. Pork chop with smoked paprika, garlic and lemon pan seared in butter and olive oil. Served with carmalized onion and mushrooms basmati rice. A tomato salad with lemon and parsley over hummus and broccoli roasted with sesame oil and garlic. Paired with: 2022 Chateau de foncaude, white Bordeaux. Grape varietal: 75% Sauvignon blanc 25% muscadelle
Nose: mineral, citrus. Palette: limestone and slight graphite with lemon peel and modest acidity slight passionfruit and pear with pronounced acidity.

Purée of carrot, asparagus/spinach, parsnip and beets with carrot infused basmati rice chicken breast stacked with Chinese carrot, lime, thyme. And white wine and seared provolone.
Wine choice: Excelium, grand vin de Bordeaux 2020. Tasting notes of graphite and petrol on the nose. Mineral and limestone, creamed pear and subtle lime. Delicious

1stCourse;
Trio of Wontons- three wontons of each, chicken, ginger and Thai basil and mozzarella, lime and red curry served with fresh greens. Paired with Gerwurztraminer from Peel Island winery Essex On.

2nd course;
Seared Banana crusted chicken with papaya, mango, edamame, lime, cilantro and coconut. Paired with a Cava from Spain. Sagura Viudas

3rd course;
Coconut, Curry and roasted apple soup. Paired with The Pavillion Chenin Blanc from South Africa

4th Course;
Pork tenderloin stuffed with goat cheese, yellow curry seared and finished with a lime peanut sauce. Served with baby bok choy and turmeric and paprika infused basmati rice. Paired with a cold ferment Chardonnay. 19 Crimes Martha Stewart.

5th course;
Spicey chocolate cake with Mango coulis, fresh papaya and ground chocolate. Paired with Lambrusco from Italy.
