This was the second annual dinner that I cooked for this amazing group of ladies. They all demanded the avocado salad ag*in 🥑 Delicious menu selections! A nice little 3 course 😋 I'll see you all ag*in next year 🥳

Carrot Ginger Soup -
roasted carrots | coconut broth | sea salt maple crema | toasted pepitas | pomegranate arils

Avocado Salad -
champagne honey vinaigrette | fresh avocado | napa & red cabbage | crunchy togarashi chickpeas | pickled shallot pedals | lemon coriander labneh | gruyère crisp | toasted nigella seeds

Cast Iron Atlantic Salmon -
ponzu marinade | aromatic basmati rice | sautéed tiger shrimp | miso butter bok choy | yuzu veloute sauce

Another incredibly delicious 3 course dinner for a group of 12 friends pre-Christmas shenanigans 😃

Always a pleasure cooking for you guys! I'll definitely be seeing you all ag*in in the new year.
I invited my sous chef from the golf club to assist with this one - Shout out to Hunter Latour 🤙

Parsnip & Apple Potage -
with spiced rosemary apple compote and parsnip chips

Thai Salad -
rice noodle | napa cabbage | julienne carrot & bell pepper | daikon radish | spicy peanut satay vinaigrette | g*i yang tomato | fried wontons | cilantro & coconut emulsion | toasted peanuts

Surf & Turf -
cast iron seared sous vide filet mignon | blackened salmon | saffron risotto | bone marrow & herb butter | pontchartrain sauce | espelette pepper

Hey foodies!
I need your feedback 🙂
As you know, I'm the chef at the golf club, and I'd like to know what kind of restaurant the majority of you would most likely dine at. Do you travel outside of town for your dining needs? If so where? Last year during the off-season I offered a multi-course table d'haute style rotating menu on weekends (casual fine dining). However, there was a lot of interest in my steakhouse style menu, especially seafood.
I've been in the industry for 20+ plus years, and spent most of my culinary career downtown Ottawa. My background is mostly steakhouse, seafood, fine dining/casual fine dining, events and weddings. Would you dine at the golf club restaurant if we served something you enjoy, and were open during the winter? I'd love to hear from you.
