I am pleased to announce 2 events for LetscookItalian: the first is the annual "Food Showcase at Bridges" event that will be held on the 26th at the Railway Museum.
The second is the weekly opening, at the kitchen of Seed Confectiones -159 Ross Street, Saint Thomas - every Thursday from 10 am to 7 pm.
You can come and taste, order lunches, buy what is ready, book for the cooking classes that will be held.

What is the difference between frozen and deep-frozen?
In both cases, we are referring to a technique that involves a drastic lowering of the temperature of a food, which occurs with the aim of preserving it for as long as possible.
However, these two methods are different from each other because they follow very distinct procedures, and not only that. In fact, deep-freezing and freezing meat differ mainly in two elements: the degrees Celsius to which the food to be preserved is brought and the duration of the process.
So let's look in detail at the differences between deep-frozen meat and frozen meat.
Pros and cons of freezing
How many times have you put a package of meat in the freezer? In that case, we are talking about freezing, a system that we can define as "do-it-yourself" that gradually and slowly brings the food (raw or cooked) to a temperature below 0° C (usually between -7° C and -12° C).
Freezing is very effective for extending the shelf life, but it has some critical issues:
Large ice crystals form that can cause damage to the biological structure and the food does not retain the original nutritional and organoleptic values ​​​​of when it was fresh.
It does not allow you to completely block the activity of living cells and enzymes that continue to "work", contributing to a form, albeit slowed down, of deterioration of the original quality.
3 advantages of freezing meat
This is an ultra-fast and efficient freezing technique. Through industrial freezing, the meat reaches a temperature of -18 ° C in a very short time and this rapid cooling brings numerous advantages:
Unlike freezing, freezing meat allows the formation of micro-crystals of water that do not damage the biological structure of the food.
It leaves the organoleptic and nutritional structures (proteins, vitamins, etc.) intact without affecting the original flavor, tenderness and juiciness.
It significantly reduces the bacterial load, keeping the product at its maximum potential.
In practice, the natural aging process is blocked until you decide to defrost the product which will be fresh, indeed better.
