Great BBQ is two things really.. The quality of your ingredients, and your ability to manage a fire. The bridge between the two is firewood.... Since the very beginning, our very own local Lens Firewood has helped us maintain that bridge with carefully sorted and segregated (what I would call curated), deliveries of clean, split hardwoods.
For anyone wanting to work or play with live fire cooking, I suggest the cherry or the ash. One rich in flavor and quick to season, the other carrying the deep notes of Texas post oak....
