🎉💛 A wonderful group of siblings gathered in beautiful Niagara to celebrate their amazing Dad’s 80th birthday!!!

This special event was thoughtfully planned all the way back in February 2025 with every detail considered to create a beautiful, relaxed vacation filled with meaning, nature, and amazing food. 🥂🌿

To help them make the most of their time outdoors exploring Niagara, I prepared fresh, easy lunch platters, giving them more time to connect, adventure, and enjoy the stunning surroundings.

Dinner Day 1 included:

Goat cheese platters, vibrant plant-based appetizers like marinated artichokes, fresh veggie rolls in lettuce boats with almond sauce, and heirloom carrot crudités.

Dinner also featured a seasonal Bosc pear salad with apple vinaigrette, perfectly grilled lamb chops, and delicious vegan options like summer-inspired ratatouille with a medley of roasted vegetables.

And for dessert,  by special request, I created two takes on a pumpkin-inspired treat:

🎃 A rich pumpkin cheesecake made with butternut squash, roasted kabocha cream, and a citrus-spiced graham crust

🌱 A plant-based version made with chickpeas, nutritional yeast, and the same dreamy kabocha cream

The next day, the celebration continued with a vibrant lunch:

🥙 Chicken and lentil wraps

🥗 Crisp side salad and fresh fruit platter

🌶️ Spiced tofu with saffron mango salsa

🐟 Herb-marinated salmon with citrus and pineapple flowers

Some special moments were captured in photos and videos, and some were simply lived and cherished, but all were filled with love, flavor, and gratitude

Thank you! for these beautiful candid photos captured while I was preparing the dishes. 📸 👩‍🍳💖

It was truly a pleasure to create a private dining experience for a lovely bachelorette celebration, inspired by the freshness of summer.

The menu featured a refreshing salad, a unique combination of roasted vegetables, a delicate salmon dish, and a plant-based vanilla and peach ice cream, all thoughtfully crafted to be gluten-free and soy-free menu requests, using wholesome, natural ingredients.

I'm so grateful to meet such amazing people through this work. There’s always something to be shared, something to be learned.😃

Took on a fun challenge with some creative 🫛 vegetarian dishes (with a little indulgence sprinkled in 😉).

I didn’t get photos of every course, but each dish was a joy to make, and even better to share. The whole meal came together beautifully.

Seeing the Butler House in person was such a treat. The historic details and cozy atmosphere truly made the evening feel extra special.

A big thank you to for the lovely referral! I was so grateful for the chance to cook and serve this special dinner in one of Niagara’s most stunning heritage homes.

Appetizer

🥖 (V) Apricot & Armagnac Crostini

Crostini topped with apricot compote infused with Armagnac, crumbled feta, and fresh herbs.

Salad

🥗 (V) Caesar à la Medalla

Romaine gently tossed in house-made Caesar dressing with bright lemon and garlic notes.

Mains

🍖 Cast Iron–Braised Veal Osso Buco

Ontario heritage veal, slow-braised in red wine and tomato with garden aromatics. Served with olive oil mashed potatoes and zesty gremolata.

🌿 (V) Herb-Infused Roasted Vegetable Spiral

Seasonal vegetables arranged in a delicate rose spiral, slow-roasted to bring out their natural sweetness and infused with fragrant herbs.

Dessert

🍮 (V) Classic Panna Cotta

This group from 2022, and now here in 2025, holds a special place in my heart. They were some of my very first batch of clients visiting the Niagara region!

From tasting my Paella Medalla and seafood dishes to meat and Mexican food, this group is definitely full of foodies.

One of the guests is gluten-free this year, and I was able to make everything gluten-free! so lucky for us, their Mexican cuisine and dishes requests are perfect for that!

Here’s a little throwback to your celebration! though some of the dishes didn’t quite make it into the photos. It's been so amazing to watch each of you tie the knot, and what a journey it’s been!

Happy 40th birthday to my client’s friend! 🎉 And Happy International Women's Month! 🌷🎀🩷

I’m beyond grateful for the opportunity to cook for this incredible celebration. A huge thank you to my client for trusting me with this special event and for referring me to her friend , It makes me so happy to see my past clients and I'm incredibly grateful for their continued love, support and referrals.

To make sure everyone had enough, I replenished the table four times throughout the event. It worked out perfectly for the early birds, the partygoers, the snackers, and those craving late-night bites.

Here’s what the celebrant requested:

100 mini sliders

100 chicken skewers

60 vegetarian sweet potato & chickpea sliders

An interactive build-your-own taco station with:

Carne asada beef steak tacos
( sirloin steak, rib-eye cap beef birria)

Tacos Al pastor slow cooked pork tacos
(along with a variety of sauces and accompaniments)

Chicken thighs satay skewers
(chicken thighs cut for extra flavor)

Vegetarian sushi and crab and cucumber sushi

Gluten-free options for those with dietary restrictions

Such a fun and wonderful way to celebrate a milestone birthday!

I had the pleasure of creating a custom 5-course dining experience for a wonderful client! We worked together to design this unique menu, and the result was nothing short of extraordinary.

Here's a glimpse of what we put together:

🍷 Starter: Pomegranate gems & lettuce with Icewine, shallots, and Niagara apple vinaigrette

- refreshing and vibrant way to start the meal.

🦑 Course 1: Chimichurri-marinated octopus with fennel 3 ways.

–tender octopus paired with earthy flavors for the perfect bite.

🦞 Course 2: Seared scallops with marisoliel seafood sauce, frisée, and microgreen

-beautiful, deep seafood dish full of flavors.

🥩 Course 3: A rare, top-secret custom steak cut (known only to true steak lovers) that had to be specially requested from the butcher a cut so exclusive it’s not even available for general sale.Paired with triple-herb marinated roasted root vegetables, hasselback potatoes, charred onions, merlot wine sauce reduction, and a savory mushroom duxelle with garlic confit.

-an unforgettable main course for the steak connoisseur.

🍒 Desserts:Cherry banana amaretto foster.

a sweet and indulgent finale to this incredible meal.

Small businesses during pandemic

We all know that pandemic has a global effect on each one of us, so why not help one another? While the food industry has shifted tremendously, additional effort to this situation is a must like doing your part by staying apart; and now takeaway food is the new norm of dining.

So here I am for the love of food and cooking! I will be offering restaurant-quality food-designed to be affordable & accessible. We are aiming to launch mid to end of June 2020. at https://medalla.ca/ It will be delivery or curbside pickup as a solution to the moment.

And to all other businesses out there innovating and striving, I’m inspired by your tenacity.
