I had the pleasure of creating a custom 5-course dining experience for a wonderful client! We worked together to design this unique menu, and the result was nothing short of extraordinary.

Here's a glimpse of what we put together:

🍷 Starter: Pomegranate gems & lettuce with Icewine, shallots, and Niagara apple vinaigrette

- refreshing and vibrant way to start the meal.

🦑 Course 1: Chimichurri-marinated octopus with fennel 3 ways.

–tender octopus paired with earthy flavors for the perfect bite.

🦞 Course 2: Seared scallops with marisoliel seafood sauce, frisée, and microgreen

-beautiful, deep seafood dish full of flavors.

🥩 Course 3: A rare, top-secret custom steak cut (known only to true steak lovers) that had to be specially requested from the butcher a cut so exclusive it’s not even available for general sale.Paired with triple-herb marinated roasted root vegetables, hasselback potatoes, charred onions, merlot wine sauce reduction, and a savory mushroom duxelle with garlic confit.

-an unforgettable main course for the steak connoisseur.

🍒 Desserts:Cherry banana amaretto foster.

a sweet and indulgent finale to this incredible meal.

An all-gluten-free menu request with amazing flavors! 🌱✨ enjoy the best of both worlds (delicious & gluten-free!) 

I had the pleasure of creating a custom 5-course dining experience for a wonderful client! We worked together to design this unique menu, and the result was nothing short of extraordinary.

This is coastal comfort food at its finest! Here's a homemade twist on classic Cioppino 🦀🌊🍲.

There's nothing like a bowl of seafood soup made with the freshest ingredients.

This rich, savoury soup is packed with sweet crab, fresh fish, and shellfish, all simmered in a flavorful tomato broth with garlic, onions, white wine, and a mix of fragrant herbs. It’s a true celebration of the ocean’s bounty, delivering comfort and flavour in every spoonful perfect for the winter season.

What makes it even better? The sweet, delicate taste of B.C. crab shines through, perfectly complemented.

I had the pleasure of cooking for a wonderful 40th birthday celebration at Hunter Home of 🎂🍾🎉

The menu consisted of:

Octopus Salad with fennel 3 ways

Orecchiette pasta with sugar bomb tomatoes, basil, rosemary, sausage & arugula

Ribeye steaks with mushroom duxelle, potato mustard sauce, merlot wine reduction, maple glazed carrots

Ribeye board with roasted potatoes, caramelized onions & fall vegetables

It was such a joy to be part of this special evening! Thank you for trusting me to create this memorable experience.

What a beautiful sunny weekend for this incredible couple at 🍇🥗🍁☀️ I had the pleasure of being their private chef for a birthday dinner, where they requested a gluten-free menu.💐🎁🍰

The menu included a mixed green salad with roasted apples and homemade Niagara apple vinaigrette, along with roasted heirloom carrots, pomegranate, and Parmesan.

We also made handmade gluten-free potato Parmesan gnocchi served with a kabocha coconut cream sauce and pancetta.

Additionally, there is a delicious Italian meat for the main dish (not shown in the pictures because I was serving it up hot and fresh!) that paired perfectly with roasted root vegetables and marinated roasted peppers.

For dessert, we had a flourless gluten-free chocolate cake paired with homemade Niagara Concord grape jelly.

We even enjoyed an interactive cooking session, where they rolled up their sleeves and made the gnocchi from scratch. They really knocked it out of the park!

And let’s not forget, this property boasts a stunning back-to-back view of vineyards and is just minutes from Niagara wineries, all in a relaxing, quaint setting that makes the entire experience even more magical!🍇🍷✨

30th Milestone Birthday Celebration and Toronto Bride Bachelorette Party in Niagara 👰🎉🎂

I’m thrilled to share the menu I prepared for a client’s special evening as part of my private chef service:

Seared Scallops served with a tasty roasted corn and pea puree, plus a mix of pickled veggies.

Niagara Fall Harvest Salad featuring a wonderful blend of quinoa, organic squashes, beets, microgreens, apple, kale, sweet potato, cranberries, roasted cauliflower, and sweet bell peppers, topped with pomegranate seeds and feta cheese on the side.

Pasta al Limone, where al dente pasta meets a bright lemon sauce, along with roasted bell peppers and Parmigiano Reggiano.

Herb-Crusted Salmon Platters with glazed carrots, a refreshing triple citrus remoulade, dill, seasonal vegetables, and a delicious roasted sunset sweet potato sauce.

Homemade Cheesecake topped with a berry compote for a sweet finish.

While I dedicate my time and attention to my clients during these special moments, I sometimes have limited opportunities to capture photos or videos for reels. But rest assured, I’m fully present for the real experience!

30th Milestone Birthday Celebration and Toronto Bride Bachelorette Party in Niagara 👰🎉🎂

I’m thrilled to share the menu I prepared for a client’s special evening as part of my private chef service:

Had an incredible time catering a beautiful backyard wedding for an incredible couple last weekend!
My hands were so full that I didn’t get to document everything, but it was such a joy to be part of their special day.

Luckily, one of the servers managed to snap a quick video of the buffet for me. Thank you!!!

The bride is on a vegan diet and gluten-free due to health conditions, so I sourced all ingredients that are certified gluten-free, with a menu for everyone to enjoy.
For appetizers I made delicious homemade beef meatballs and vegan meatballs served with gochujang sauce, scallions.

There's also a gorgeous grazing table with fruits, fall harvest crudités in individual cups for 50 people, vegan brie platters with Icewine jelly, homemade pepper jack vegan cheese, and sweet potato gluten-free crackers.

For the buffet, we have grilled cauliflower steaks, with savoury soy-fired grilled chicken, wild rice blend, beef bourguignon, Asian-style vermicelli salad, and fall harvest salad.

We also helped them arrange two towers of desserts that included French macarons, mini donuts, and delectable cupcakes.

While I wasn't able to capture the view of the grazing table setup, it was on a beautiful hill with breathtaking scenery.

Again a heartfelt thank you to the couple for choosing me to cater their special day. It was an honour to be part of such a beautiful celebration. Wishing them all the love and happiness in the world!

The couple were the best coordinators, making their wedding a truly deserving and dreamy night.

Had an incredible time catering a beautiful backyard wedding for an incredible couple last weekend!

Small businesses during pandemic

We all know that pandemic has a global effect on each one of us, so why not help one another? While the food industry has shifted tremendously, additional effort to this situation is a must like doing your part by staying apart; and now takeaway food is the new norm of dining.

So here I am for the love of food and cooking! I will be offering restaurant-quality food-designed to be affordable & accessible. We are aiming to launch mid to end of June 2020. at https://medalla.ca/ It will be delivery or curbside pickup as a solution to the moment.

And to all other businesses out there innovating and striving, I’m inspired by your tenacity.
