I love working with finger limes. Native to Australia, this amazing fruit houses an inside of caviar citrus pearls that have a slightly sour taste that explode mini citrus bursts in your mouth. They are such a fun garnish for a sweet cocktail or an elegant dessert.

Happy Easter! Unprofessional shots of last night's Legion Easter dinner = mile-high biscuits, turkey confit with orange and ginger, honey-roasted carrots, scalloped potatoes, and lemon garlic asparagus. Not featured = turkey bone and orange reduction gravy and lemon olive oil cake with strawberry and whipped cream (it came out so good last weekend, had to give it another debut).

So, turns out 2019 wasn't the best year to launch a private catering business. 🤷‍♀️ But here are some pictures from my first comeback event...appropriately for the first client I had. Many thanks to Refinery Leadership for choosing me to provide pirate themed food for their retirement bash! (Shots include plantain avocado hushpuppies with tomato chutney, Caribbean-marinated chicken daggers and chili lime prawns with togarashi aioli. Not featured = drunken pineapple rum cake with butter rum glaze and charcuterie board.
