What’s your go-to meal that you serve for Easter Dinner?

Other than roast turkey or ham, lamb is a very common staple served for Easter, especially in my household. These Zesty Mint Lamb Burgers from my cookbook are super flavourful and light, with hints of fresh mint and lime that springboard your palate into the spring season 🍋🌸🥬

Grill these lamb burgers and serve them up with a bread or veggie bun, side salad or even toasted potatoes! Recipe is on page 15 of my cookbook (link in profile).

I’m back with another simple and mouthwatering recipe that’s perfect for the season. Introducing Moroccan Spiced Lamb with Creamy Kabocha Squash 🥘 This is a remake of the Moroccan Rack of Lamb and Curry Cauliflower mash from my cookbook, but uses lamb lollipops and creamy kabocha squash.

Using lamb lollipops is a budget friendly alternative because you get to choose the amount you want, without having to purchase a whole rack.

What’s your favourite cold weather comfort food? 🥘

On very cold days, my go-to comfort foods are hearty stews and occasionally a grilled cheese sandwich with a squash curry soup. If you’re feeling fancy however, my Braised Red Wine Short Ribs with Garlic Herb Mashed Rutabaga is a deliciously healthy & hearty meal that is sure to impress🤩

I gave this dish a low carb spin by using rutabaga instead of mashed potatoes. So this is a great option for those looking for a low carb version or looking for ways to cook with rutabaga.

Most go-to’s for low carb burgers usually use a lettuce wrap; I even have a few recipes using a lettuce wrap in my cookbook. But lets be real, as delicious as they are, they don’t always hold up and can get messy, as if life isn’t messy enough 😉

Tell me, what are your tips for elegantly eating shelled seafood in public? 🦀🦞

I’m talking shelled crab, lobster, oysters, and even mussels, like these flavourful Thai Coconut Curry Mussels, paired with Pearl Barley… *Chef’s kiss* 👩🏾‍🍳💋

As delicious as these were, I ate them at home, by myself, with a fork and my hands 🙈 and I think I used up two paper towels when I was done. I mean, it was finger licking good, but I would like to have some etiquette the next time I eat them!

My amazing interview on Turning Point with Priya Sam 📺🧡

“The accident literally got me down to ground zero, and I had to start from scratch. So I found that this cookbook was definitely a healing journey for me.”

Valerie Azinge, founder of My Digital Kitchen, says she is grateful for every day after surviving an accident that claimed the life of her friend. They were riding a motorcycle when they were hit by a drunk driver.

Valerie was injured and recovering in hospital when she was offered the opportunity to write a cookbook. Between doctors appointments and physiotherapy, she found the energy to test recipes, take photos and put her favourite recipes into writing.

I personally love both🍦

A sunny hump day calls for Orange Mint Rosé 🍇🍃🍊 These popsicles are the perfect fruity summer treat to beat the heat ☀️ You can also switch out the Rosé for an alcoholic-free mocktail like

Ingredients:

1 stalk mint leaves
Juice from 3 large oranges
8oz dry Rosé (or mocktail blend)

1. Crush mint leaves in a mortar and pestle. Add a fee drops of water and crush until semi paste like.
2. Pour orange juice and Rosé in a jug. Add in crushed mint leaves and stir.
3. Pour the mixture into popsicles moulds and freeze for 2 hours.

Where are my quiche lovers at?🙋🏾‍♀️

Inspired by “Refrigerator Clean-out Quiche,” my version uses kale, onions and bell peppers with some leftover phyllo dough sheets I found in my freezer. This is a great way to utilize left over produce that would go bad from being left in the fridge for too long.

Happy St. Patricks day!🍀 How are you celebrating?

I mean, a green smoothie may not fall in line with the festivities 😂 but if you want something refreshing and green before the real party begins, this Pineapple Baobab smoothie is calling your name.

I added baobab powder from for added antioxidants, and a healthy scoop of collagen powder from for skin health, all to help transition nicely into the spring season 🌸

Smoothie contains kale, spinach, pineapple, 1 banana, 2 tbsp boabab powder and 1 scoop collagen.
