The Metropolitan Opera new season has started and we are back at The Grand Tier Restaurant with brand new creations for the fall.

Venison chops, classic fillet mignon, crab cakes and foie gras terrine to mention a few.

We are now in the middle of our American Ballet Theatre season at the The Metropolitan Opera and we are having a lot of fun working summer products to match the different ballet production .

This week Onegin gave us the inspection for this Vegan dish combining Chickpeas, Aquafaba and Zucchini flowers straight from Ideal Farm and Garden in Sussex county NJ (I carry those on my commuter bus in the morning!).
