Happy Holidays from one of the best team around!
The Grand Tier Restaurant kitchen team does it all! Cook state of the art dishes nightly for our restaurant, serves 400+ guests at fancy galas, receptions and cast parties as well as take care of the whole metopera staff and performers at the cafe.

Not to mention cater this year memorable Holiday party! (Photo taken at the end of this memorable day).

We are now in the middle of our American Ballet Theatre season at the The Metropolitan Opera and we are having a lot of fun working summer products to match the different ballet production .

This week Onegin gave us the inspection for this Vegan dish combining Chickpeas, Aquafaba and Zucchini flowers straight from Ideal Farm and Garden in Sussex county NJ (I carry those on my commuter bus in the morning!).
