for anyone wanting ideas for dinner.
Wednesday Evening's Private Dinner:
Prepartion:
Pounded, paillards of chicken breast, seasoned, dredged, quick seared, and rendered.
Thin sliced criminis sauteed 'til color and texture pulled up. artichokes, capers, & white wine, added & reduced by half. Heavy cream added, reduced 'til nappe. Finished with butter. Rendered chicken paillards added & immersed in white wine, caper, cream sauce.
Sauteed, stemmed, bathed, torn Red Swiss Chard in evoo, s&p, & lemon.
Fresh Fettuccine dropped into a rolling boil of salted water 'til aldente, drained 90% water, (not rinsed!), finished with evoo.
Plating:
Folded Chard in 3's around a hand thrown Dinner Pasta bowl. Turned Fettuccine high. Shingled 3 immersed paillards askew. Laddled complimentary portion of silky mushroom & tangy artichoke, white wine cream sauce a top protein.
The combination of crisp fragrant wine, sweet cruminis, silky cream sauce, teased with capers, and spunky, bouncing Fettuccine, made for a quiet table once served, from the 9 year old boy, to the guest, visiting for a spin.
Dessert:
Tequila flambed compote of fresh, sweet plum, & apricot, with garden picked Basil. Finished with a splash of Balsamico.
Plating:
Spooned sweet, warm tequila infused summer fruit & herb Compote into a frozen glass dessert bowl. Topped with a scoop of rich vanilla bean ice cream, and a drizzle of the tequila infused fruit juice rendering.
I'm happy they're happy.
ACCOUNTABILITY
Due to extenuating circumstances, I only confirmed this dinner menu the day before, when I finally got a chance to visit, meet, and set up a grocery account with the client/wife/mother/businesswoman at her home.
On the day I was to cater the dinner, I shopped, with their account, arrived with groceries at their residence. Navigated the whole kitchen. Prepared, cooked, plated, served and cleaned up All, after only having visited for a stent the day before.
WHO NEEDS MY EXPERTISE?
My target audience are clients with focus and purpose, involved and goal oriented, all the while, running a family. They are living a full life, and have mutual respect for a seasoned professional, undertaking their own entrepreneurship, and when hired trust my guidance, suggestions, and ability to deliver.
With years of knowledge and experience,
I'm equally focused on those people who are involuntary bystanders of their failing bodys,
yet are Warriors, fighting a private battle, and want to take advantage of my offer to help guide, and work beside them to find relief they desperately need, through a healthy regimented plan.

I will give you back much needed TIME. Time you didn't even know you were giving to everything food. When this weight is lifted you will feel a bright shift in your relationships.
HEALTH: (GOOD HABITS FORMING)
When we find that thing that gets us out of bed in the morning, we'll do whatever it takes to make it happen, sometimes even neglecting our health for it. Start prioritizing. Choose you.
DECOMPRESSION:
With the economy today, we work more and get paid less. So it wouldn't seem logical to hire someone to cook for you when you're perfectly capable of cooking something for your family tonight, but you won't. You don't. You're tired, and that fast food place will fill your 3 boy's belly's for 15 bucks. Can't beat the price...well, that's because it's all processed and filled with perspectives. 🤢
Your boys WILL pay the price later. Is it a gamble you're willing to subject your children to til they can pay their own way? By then, they might already have developed major health issue.
RECOGNITION & APPRECIATION: of & for eachother and those impressionable little ones:
I want to offer my knowledge and experience, to that couple, both, working long hours, with kids in the house. You're spread thin. Occasionally on edge. Making every effort to get ahead, with no time for family.
Hire me to cook one week worth of meals as a gesture to your spouse for seeing things through and always giving you support and encouragement.
I will have relieved you both, for that week at least, of having to think about the messy menace that is family dinner time.
Be open to Learn from me, start creating some new habbits.
You will stop getting food to-go, whether at a fast-food joint or one of the restaurants down the street to save time. You'll discover you have saved money, hundreds, every month.
You might discover something about yourself you never had time to see or hear because you're bogged down by your stress, and it's loud in your head when you can't decompress.
