Available any day of the week as long as I have two days’ notice and I’m not already fully booked on the day you want.

Please contact me to discuss your dietary requirements and dishes you miss from your holidays to Greece or Cyprus, as there are options not listed below that I can suggest and prepare for you. The menu below is an example of my most commonly requested dishes.

I deliver to the locality of Wrexham, Hope, Caergwrle, Wirral, and Chester. There is a minimum requirement of two dishes per order plus £3.50 for delivery.

Made with the freshest ingredients, no shortcuts or cheap alternatives, organic spices, and herbs.

Most of these can be frozen. Please ask if not sure. They serve 5-6 main portions generously for the savoury options and up to 9 portions for the sweet options.

Most of the dishes can be adapted for gluten-free, dairy-free, and vegan customers.

(known as Pastichio in Greece)

Similar to moussaka but without aubergines, this pasta bake is made with layers of penne pasta sprinkled with grated halloumi & dried mint, beef mince sauce, and a bechamel sauce on top. Perfect for children also.

Caramelised leeks, fresh spinach, herbs and feta cheese in a filo pastry pie.

Made with local stewing beef, caramelised onions, mushrooms, new potatoes, cinnamon, cloves & other herbs and spices. Slow-cooked for several hours until melt-in-the-mouth succulent.

Stuffed peppers with turkey mince, rice & vegetables, and plenty of aromatic herbs and spices. They are baked in the oven until succulent. Approximately 9 whole peppers per dish

Beef & rice meatballs packed with aromatic flavours and cooked in a rich fragrant tomato sauce.

Courgettes, peppers, aubergines, and mushrooms cooked in a rich fragrant tomato sauce with orzo pasta to absorb all the delicious juices.
Papoutsakia £30

Aubergine halves, scored, seasoned, roasted and topped with a Mediterranean vegetable sauce, crumbled feta cheese and baked

Koupepia £40

Classic stuffed vineleaves, the Cypriot version of dolmades, only in Cyprus they are made with meat. Mine are made with turkey mince because it is lean, healthier, and light tasting, as well as fresh and dried herbs, tomatoes, spices and rice.
Lahanodolmades (vegan) £40

Stuffed cabbage leaves with finely chopped vegetables (mushrooms, courgettes, onions, peppers), sauteed with fresh & dried herbs, spices, tomatoes and rice, and baked until succulent.
Desserts

Baklava. £30

Layers of filo pastry with crushed almonds, walnuts, and pistachios, warm spices and soaked in a cinnamon & clove, honey syrup.

Ravani. £30

Aromatic, light semolina & flour sponge flavoured with fresh lemon zest and lemon extract and infused with a warm cinnamon & clove spiced syrup, and topped with crushed pistachios.
Galaktopoureko £30

Filo pastry encasing a rich semolina, milk, orange infused custard.

Greek inspired cheesecake (can be gluten free). £30

Spiced crumb base, layered with mascarpone and cream infused with lavender & rose water and topped with a sour cherry preserve all the way from Greece. This is my very own recipe and is light, fragrant, and a great way to end a meal.
Pistachio Tiramisu £30

A Greek take on the classic, made with sponge fingers dipped in Greek coffee, pistachio infused mascarpone cream layers with sweetened condensed milk, and crushed pistachios.
Greek twist on the British Apple, Blackberry & Pear Crumble £30

Using eating apples instead of cooking apples reduces the sourness and need for extra sugar, and maximises the natural sweetness of the apples. I use whatever apples and pears are sweetest and freshest at the time of ordering, cut into chunks not pulp, gently softened with with dark brown sugar, vanilla extract and cinnamon. I add the blackberries at the end to hold their shape and top it all with a crumble mix made with gluten free oats, flour (can be gluten free), Welsh butter, a mixture of spices including cinnamon, cloves, and cardamom, and crushed almonds, hazelnuts and macademias.

Have you ever been to a taverna in Cyprus for meze?

Do you remember how it works?

You sit down, order ‘The Meze’ and chat, drink, and enjoy yourself while the waiter brings each dish as and when it’s ready, gradually adding an array of tasting dishes including dips, salads, and main dishes, all in small portions for sharing and tasting 😋

I want to offer this concept in your home as a personal chef

This is how it works:

1️⃣ We discuss the number of people you are inviting to your home for a lunch/dinner party, their dietary preferences, allergies and favourite dishes.

2️⃣ I create a tailor made menu JUST for you and your guests

3️⃣ I shop for the ingredients and do my prep at my home the day before your meal

4️⃣ You organise your table, decorate it and set it up ready (including your drinks)

5️⃣ On the day, I arrive at a time we agree, a few hours before you want to start eating so that I can get organised and begin cooking anything that needs to be cooked there

6️⃣ Once your guests arrive, you take care of hosting and having fun and I will cook, and serve each dish fresh over the course of the meal, including dessert

7️⃣ I will clear up, wash whatever I have going on in the kitchen, make you all some Greek coffee or my special Greek mountain tea, and leave you to enjoy the rest of your evening without worrying about dishes other than what may be left on the dining table.

For this, I charge a flat fee of £150
Plus travel costs if you are outside my immediate area
Plus the cost of the ingredients for your specific menu (I will bring receipts)

There are many dishes that are best cooked fresh rather than in advance as per my standard menu

How are we all?

I’ve just returned from three weeks in Cyprus where among many other things I participated in the 3-day Limassol International Book Fair with my other baby, my children’s book & journal Poppy’s Miracle for families living with ADHD

Imagine my excitement when I discovered I was sharing my stand with Anastasia and Charalambos from Cyprus Vegan Guide 🤩🤩🤩

Of course I bought a signed copy of their book Vegan Cyprus Traditional Cuisine and I cannot wait to cook some of the recipes for you

Cyprus was largely vegan until modern trading methods brought in the dairy and meat production so it is rich in history for plant based healthy, clean, food.

Cyprus halloumi cheese, possibly the most popular cheese on menus in Cyprus and the UK but the halloumi cheese we find abroad and the real Cypriot halloumi cheese are two different things

Halloumi in Cyprus is much harder and condensed in texture and stronger in flavour due to the process of preparation and aging but also the quality of the milk.

In my mother in law’s house along with olives, the halloumi cheese is always on the table to be used as a snack or in meals.

So many people think halloumi is only eaten grilled but it is mostly eaten raw in sandwiches or grated on pasta.

My mother in law just ordered a couple of kilos to be made in her village by a specific woman who has been making the halloumi in her home for decades using traditional methods.

If I gave my mother in law what we buy in supermarkets in the UK she would be horrified. There is so much pride in foods produced here properly and I hope these traditions will be passed on to our children as we increasingly rely on cheap mass produced tasteless foods…

We will freeze ours back in Wales, and take out one at a time but they will all be gone in a matter of weeks 😭

Even so we have to the best with what we have but I hope this post will help you appreciate these foods a little more especially if you visit their countries of origin.

In the meantime, instead of grilling yours, try shallow frying it, it’s completely different and grate it raw on pasta instead of Parmesan 😋

Elies tsakistes

Elies means olives and tsakistes means cracked or crushed.

These have a permanent place on my mother in law’s table (they are literally never put away) and are prepared by picking the olives from the trees and cracking the flesh by placing them on a flat stone surface and hitting them with a stone to break the flesh. They are then placed in brine for several weeks or months to mature and soften.

To prepare them to eat, they are drained, rinsed in plenty of water, placed in a bowl, and drizzled liberally with extra virgin cold pressed olive oil.

We then add lots of chopped garlic, crushed coriander seeds, and freshly squeezed lemon (a lot) and leave to marinate.

They are eaten with EVERYTHING.

If you can’t get hold of cracked olives you can still buy olives in jars or packs and marinate them in this way.

Game Changer 🙌🏽

My husband left for Cyprus a couple of days ago

He went ahead for a wedding but the flights were ridiculous because of half term so we are following him in 2 weeks to join him there for a further 3 weeks woohoo prepare for lots of photos! 😂

Been a bit quiet here lately, I’m spinning so many plates at the moment but all in a good way.

I’ve landed myself a part time job which I’m doing alongside my little food business and my writing work

Certainly lots of variety to my days! 😜

In the next week I’ll be at work two days in a beautiful farm shop (will post separately when I get some lovely photos of it), giving 4 back to back talks at a local college to help students set goals and manage their workload, and cooking a food order for a lovely customer of mine for her her family reunion of 50 people!

My ADHD brain loves variety and I’m certainly getting lots!😂

Photos below of a talk I have at Halkyn Castle Wood a few days ago with my dog Poppy sharing our family’s ADHD journey and how I came to write my children’s book. I loved this one, Vanessa Warrington is an incredible woman and well-being coach gathering parents each week in her woods around the fire for craft, hot drinks, toast, jacket potatoes, beans all done on the fire. This time of sharing, and connecting is how we used to live and cope with life’s demands and it’s so vital for our health.

What I miss about Cyprus…

My Pethera (mother in law) Christina baking kolourakia savoury sesame rolls with mastic, the perfect accompaniment to coffee or tea.

Living in another country, these moments are so incredibly precious. My daughter Areti will forever recollect the memory of baking with her yiayia (grandma) and perhaps one day will be making her yiayia’s koulourakia for her children and grandchildren

I live in North Wales near (the now football related famous 😂) Wrexham.

My local farm shop is just off the main Mold road to Wrexham. Steve and his brother run this little gem of a place and sell Cyprus potatoes which make the BEST CHIPS!

Every few days I stop here to pick up my fruit and vegetable supplies, local honey, flour, cream, milk, eggs, and other goodies.

Cooking is simple. We over complicate it. Even if you use fancy methods and have trained in Michelin star standards, or you are a mum like me who wants to feed her family with wholesome, fresh, homemade food, it ALWAYS comes down to the QUALITY of your ingredients.

Less is more.

It’s my 49th birthday today and as my husband is working this evening, he took the morning off instead and we had breakfast at the New Chester Market in short view of the gorgeous shop selling plants which I LOVE! So I chose a fabulous new cactus/succulent for my bedroom.

I tried not to think how fitting it would be to have a Greek/Cypriot Meze food stall in this fabulous new market and came home instead 😂

This evening was simple, made a vegetable orecchiette dish which I buried under a mountain of Parmesan, poured a chilled white, and watched Netflix

My afternoon was spent doing some food shopping at my local farm shop, buying pet food for Melon and Poppy and doing a food delivery for a customer!

As a woman with ADHD I don’t do parties, loud, or very social. This is my perfect birthday 🥳

Treated myself to some fresh figs from my local farm shop and blew out the candle my daughter placed in a half eaten tub of ice cream 😂
Finished off the ice cream and shall soon retire to my bed with a hot cup of tea, chocolate and my journal
Wonder what next year has in store?🤔🤭

The biggest compliment I can get is when a new customer contacts me to place an order because they ate my food as s guest with friends who are customers of mine already.

Gaining customers in this organic way means so much because they’ve tried the goods and liked them, not just responding to a fancy ad or a reel (which I’m still trying to get to grips with 😂)

This dish of my take on beef souzoukakia which are a cross between souzoukakia, yiouvarlakia, and keftedakia, are ready to be delivered tomorrow. Even bigger compliment that she lives over an hour away but will meet me half way to pick up!

😋Baklava. £30

Layers of filo pastry with crushed almonds, pistachios & walnuts, and warm spices, soaked in a cinnamon, clove, and honey syrup.

😋Ravani. £30

Aromatic, light semolina & flour sponge cake flavoured with fresh lemon zest and lemon extract, a light sprinkle of ground mixed spice infused with a warm cinnamon, lemon peel & clove spiced syrup, and topped with crushed pistachios.

Did you know cheesecake actually originated in Greece? Here is my take on one.

Spiced crumb base, layered with mascarpone and cream infused with lavender & rose water and topped with a sour cherry preserve all the way from Greece. This is my very own recipe and is light, fragrant, and a great way to end a meal.

😋Pistachio Tiramisu £30

A Greek take on the classic, made with sponge fingers dipped in Greek coffee, pistachio-infused mascarpone cream layers with sweetened condensed milk, and crushed pistachios.

😋Greek twist on the British Apple, Blackberry & Pear Crumble £30

Using eating apples instead of cooking apples reduces the sourness and need for extra sugar, and maximises the natural sweetness of the apples. I use whatever apples and pears are sweetest and freshest at the time of ordering, cut into chunks, not pulp, and gently softened with dark brown sugar, vanilla extract and cinnamon. I add the blackberries at the end to hold their shape and top it all with my crumble mix made with gluten-free oats, flour (can be gluten-free), Welsh butter, a mixture of spices including cinnamon, cloves, and cardamom, and crushed almonds, hazelnuts and macadamias.

Today we celebrate our daughter Areti’s 12th birthday

We are a neurodiverse family, which means celebrations look very different, low key, simple, quiet.

Areti had her best friend over for a two day sleepover Thursday and Friday with lots of play, movies, and fun.

Today which is the day of her birthday she wanted her daddy to take her to their favourite cafe while they listened to their favourite music together, and returned home for a fruit brunch and birthday cake.

She was given lots of choices for food including eating out at a restaurant but she asked for fresh fruit platters for brunch at home with her family ❤️

So I obliged ☺️

I don’t know any other child who would ask for that for their birthday mind you a few years ago my oldest son Mihalis asked for olive pie instead of a birthday cake 😂

So here we are in our simple leisure wear, sharing a very special day with our girl.

Being the blessed result of my ninth pregnancy, it’s a truly special day 🥰
