Sabich or sabih (Hebrew: סביח) is a sandwich of pita or laffa bread stuffed with fried eggplants, hard boiled eggs, parsley, tahini sauce & more. It is an Iraqi Jewish dish based on a traditional quick breakfast. The name of the dish comes from the Arabic word for morning. Today it has become a staple of Israeli cuisine. We took it and elevated it to an elegant Hors d'oeuvre for our guests to enjoy over a cocktail party. Here is our delicious Mini-Sabich. Great flavors in one bite.
