Meet our Chefs de Partie !
🔑 A key role in the kitchen, assisting Jun and Iris’s sous chefs

Michaela from Cyprus 🇨🇾 and Mina from Seoul 🇰🇷 both complement each other in the kitchen. One is a pastry chef, the other a savory cook. It’s a real deep friendship that has grown within our team 👯‍♀️
constantinou with her pastry diploma from the heads straight for the world’s best pastry cheffe to prove herself ! She then joined the team, much to our delight.

Michaela loves the international atmosphere at Balbosté 🌍 she likes experimenting with pastry and pushing her limits. Her obsession is the waste of food and raw materials. She is very careful and uncompromising on this point ♻️

🌞 Michaela is truly our sunshine here at Balbosté ! She radiates positivity !

Mina, as precise as a Swiss clock 🕰️ with a sharp eye and an outstanding palate, deploys magnificent creations in the kitchen under the watchful eye of her chef

After graduating from , Mina joined
chefs and at Les apothicaires* before joining as a commis.

Mina loves creating new things based on classic French cuisine 🇫🇷 Mina is rather discreet, but she’s a great artist as she loves drawing and going to the best exhibitions in Paris ! She has also a passion for great coffee and wine ☕️ 🍷

Meet our two designers Leila and Thibault !

🇨🇭🇧🇪 Of Swiss and Belgian origin, they complement each other perfectly. They’ve been part of the adventure for over two years now, co-writing unique scenographic and culinary universes with charlotte, jun and iris.

is a graduate of (a school we’re particularly fond of!), a space and object designer 🪑 who started out at and finally before joining the adventure!

Leila has a very multi-disciplinary approach, and loves the handmade and artisanal dimension she brings to each of our projects 🤲🏻

Her crushes: .store .world

Cooking is not her specialty, but she knows how to appreciate good food ! Her favorite restaurant is where she enjoys a bowl of sesame cold soba 🍜

Thibault is the image of the Geo Trouvetou, always up in the clouds with a variety of funny, poetic but above all achievable productions 💡

graduated in industrial design from (Brussels). Thibault specialized in 3D printing, a field he explored at .ulb where he worked and taught 3D modeling. Combined with his love for cooking, this passion inspired his thesis on 3D chocolate printing, which he developed in collaboration with Michelin-starred chef

while embracing minimalism. He closely follows trend studies, wonders what the next bag will be made of, or finds himself mesmerized by simple ceramics.

Meet our two head chefs Iris and Jun ! An amazing duo who lead the brigade in the kitchen with passion ❤️‍🔥👩‍🎤🥷🏿

Both have extensive experience in the kitchen of major institutions, and are applying their talents to our team. If we could define two colors for them, it would be pink 🌸 and black🌚, an interesting duality that provokes magnificent surprises on the plate of extreme refinement

🔪 is a Swiss army knife in the kitchen, and his creative brain is as strong as his technical brain.

After obtaining his culinary diploma, Jun continued to work at , Spain, Paris, Korea, and Paris.

Since 2022, Jun has been our head chef at Balbosté, where he has the opportunity to share his sensitivity to flavor, perspective, design, and culture through his food, which makes for a truly unique gastronomic experience.

is a brilliant, sensitive and creative pastry chef. Her approach to cooking is as close as possible to the product and the season. 🪄 She’s a magician of taste and delicacy, and her color is pink! Surprising? Not really, no.

Iris cut her teeth with the team at plaza , then followed closely in the footsteps of , whom she accompanied to and as sous cheffe before joining our team last march !

Meet the founders of Balbosté !

Charlotte and Jonathan met in the advertising world and spent over 10 years working for major agencies in France and Canada 🇫🇷 🇨🇦 . They’ve worked for Nissan, Toyota, Reebok and Monoprix, among others :) their sharp eyes and extensive brand knowledge make them an asset when it comes to understanding today’s briefs and translating a message into an experience.

Charlotte is a creative director who loves the unexpected, the ultra-creative and the disruptive. Above all, she loves branding and is a big fan of and

She has unforgettable memories of being selected and winning the young talent competition for the art director club in New York

She has a passion for the chirashi 🍱 her friend Sayaka used to make her for each of her birthdays at the studio, as well as for the architect .ando and the design studio

Jonathan’s career has mainly been in the digital sector, where he has managed large multidisciplinary team

He’s a fan of technology, and in addition to being CEO, he’s also the company’s IT manager 💻

He is passionate about human relations and solving complex problems. He has a passion for travel, and has traveled all over the world: Isande, Argentina and Peru, where he fell in love with the cuisine of
