Né dans une famille d'agriculteurs au pied de la Sainte-Victoire, il nous livre sa vision de son métier et son engagement pour la préservation de cet héritage unique.

𝗦𝘁𝗲́𝗽𝗵𝗮𝗻𝗲 𝗦𝗽𝗶𝘁𝘇𝗴𝗹𝗼𝘂𝘀 : Sans hésiter, mon amour pour l’agriculture. Ce lien fort avec la nature, le travail au quotidien dans les vignes, c’est ce qui me fait vibrer chaque jour.

𝗦𝘁𝗲́𝗽𝗵𝗮𝗻𝗲 𝗦𝗽𝗶𝘁𝘇𝗴𝗹𝗼𝘂𝘀 : Depuis 2013, tout le domaine est certifié en agriculture biologique. C'est plus qu'une simple certification, c'est une conviction profonde, une philosophie pour préserver ce patrimoine unique pour les générations futures.
Nous ensemençons régulièrement plusieurs variétés de plantes afin d’obtenir un enherbement permanent dans les vignes et ainsi éviter l’érosion. Les plantes fixent l'azote dans l'air et le restituent au sol, tout en aérant et favorisant la vie microbienne de celui-ci. Nous pratiquons également l’éco-pâturage avec des moutons qui viennent paître entre les vignes. 🐑🌱

Mais également limiter les intrants en cave pour préserver la spécificité de chaque cépage et les laisser exprimer pleinement leur typicité. 🌿🍇

One such example is the Roc de Marie from Maison Guilhem, an exquisite blend of 65-year-old Grenache and Syrah produced in Pennautier. Ever wondered why we smell the cork when opening a bottle of wine? 🍷 Let’s uncover the mystery! 🕵️‍♂️
Contrary to popular belief, sniffing the cork isn’t about checking for the quality of the wine. Instead, it’s about inspecting the cork itself. 🧐
Here’s why:
• Detecting Cork Taint: Cork taint, caused by a compound called TCA (trichloroanisole), can give the wine an unpleasant musty odor, akin to wet cardboard or a damp basement. By smelling the cork, you can catch any hints of cork taint before pouring the wine into your glass.
• Assessing Cork Quality: The aroma of the cork can also tell you about its quality and condition. A cork with a moldy or mildew-like smell might indicate improper storage conditions or potential contamination.
• Traditional Practice: Additionally, smelling the cork has become a traditional ritual associated with wine service. It adds an element of ceremony to the wine experience and can enhance the overall enjoyment of the moment.
However, keep in mind that the aroma of the cork alone isn’t always a definitive indicator of wine quality. Ultimately, the true test lies in tasting the wine itself! The optimal temperature for storing expensive wines, whether in a cellar or a wine fridge, is around 15°C 🌡️This temperature strikes a balance, ensuring that the wine ages gracefully without aging too quickly or too slowly. ☀️🌡️Warmer temperatures can accelerate the aging process, potentially altering the wine’s flavor profile prematurely. On the other hand, 🌡️❄️colder temperatures can slow down the maturation process, delaying the wine’s development. By storing expensive wines at around 15°C you provide them with the ideal environment to age gracefully and maintain their quality over time.💪😍.

🍷💪👃As a sommelier, I highly recommend employing a simple yet effective technique when dining out: always take a moment to swirl and smell the wine after it’s poured for you. This simple ritual can reveal any potential faults that may lurk within your glass.

Take a deep whiff. Does your wine smell musty, reminiscent of wet newspaper or a damp dog? That’s a telltale sign of cork taint, a common issue caused by a fungus found in some cork trees.

If you detect hints of a mouse-infested barnyard or notice a mousy aroma, there could be bacteria or Brettanomyces at play, detracting from your wine’s enjoyment.

Nail polish remover aroma? That’s volatile acidity, and it’s definitely not what you’re looking for in a fine wine. Similarly, if your wine smells like vinegar or cooked cabbage, it’s time to signal for a replacement.

Occasionally, wines suffer from accidental overheating or prolonged exposure to oxygen, resulting in unpleasant off-flavors. Trust your senses; if something seems off, don’t hesitate to bring it to the attention of your server or sommelier.🙋‍♀️

By swirling and sniffing your wine, you empower yourself to identify any flaws and ensure a delightful dining experience. As a seasoned sommelier, I encourage you to embrace this practice to savor each sip to its fullest potential.
