En météorologie, le printemps commence le mercredi 20 mars 2024, finalement la durée du jour rallonge et l'ensoleillement progresse dans l'hémisphère Nord.il y a un peu de coin vert par tout dans le jardin, les arbres commence de pousser avec quelques nouveau feuilles. J'aime bien le moment où la saison change, sur tout pour la cuisine. Il y a des nouveaux ingredients et produits pour les nouveaux creations....

Todsy's quick lunch idea - Creamy roasted carrot pasta
Here is how to get lots of vegetables in one plate. Roasted 800g of carrot with garlic, paprika, and splash of olive oil.
Can be prepared in advance even serve cold with salad is also a good side dish.

Here is the recipe

Carrot. 800g
Garlic. 3 cloves
Salt n pepper to taste
Olive oil and a spring of rosemary
Toss everything together bake for 20 minutes at 200⁰c

Meanwhile, cook the pasta of your choice and make it aldente.
Onion. 1 roughly chopped
Garlic. 1 clove
Edamame. 1/2 cup
Mushroom. 3 sliced

Fried the onion until browning appears, add in mushroom and edamame, then add the garlic mince.

Now let's make this creamy sauce.
Place most roasted carrots (keep some on the side) into a blender bowl, add 2 tsp potato starch, and 400ml water. Salt and pepper. Mix untill smooth.

Put the pasta and the creamy sauce into the frying pan. Cook and mix well add the roasted carrot in as well.
Serve while it's hot, add some chilli and more olive oil.

Today's light dinner, crispy brick rolls with sweet potato puree.
It takes about 20 minutes to prepare, easy and satisfying.

For the crispy rolls
Inside filling spinach and wild garlic paté, caramelised onions, and sauteed brown mushroom.

Served with sweet potato puree and balsamic réduction.
Sweet potato puree

2 sweet potatoes peeled and sliced, 1 carotte also sliced then steam for 15 minutes or until soft.
olive oil
salt
pepper
paprika

It's been a while since last time having this creamy fruity entremet de framboise.

The gluten free genoise with a thick layer of rapsbeey cream and topped with rapsberry jelly. Fragrant and just enough sweet, perfect combo and great dessert after a meal.

Tarte aux ananas, amande et meringue

Was trying a new gluten-free pie crust the ther day. With what I had on the kitchen counter so there was 🍍 and almonds.

Pie crust mix, rice, tapioca, almond, and water with a tiny bit oil.
For inside filling, used fresh pineapple 🍍 slice them up and lay them down.
Patisserie cream with almond butter, margarine, soy milk, vegan cream, sugar, vanilla, and a pinch of slat.
The past touch - Meringue. aquafaba, sugar, lemon juice

Fin la saison de prune, une idée géniale de consommer et sans sucre ajouter.

Prune is one of the summer fruit, at the end of the season, we might have gotten saturated with eating this fruit already.

Here is a quick fruity tarte recipe to share.

Was cleaning the food pantry, saw this little tub of flower sitting there, but can easily replace the flour to a gluten-free mixture.

Tarte brisée (the base)

250g flour or "gluten-free flour of your choice "
60g Margarine
50 ml Vegetable oil
100 ml soy milk
3 tbs if water
5 tbs of icing Sugar (optional)
1 pinch of salt
50g Almonds meal (optional)

Mix all ingredients to form a ball, then cover and place in the fridge for 30 minutes.

Roll it out and place it in the baking tin, trim the exceeded pastry off, and cut into long strings for topping

Add seeded prunes. I think I might have used 300g of them.
Bake it at 180°c for 25 minutes

A little pastry with a layer of crème de patissier (pastry cream) and a layer of cherry juice jelly then topped with loaded cherries 🍒

Quick assembling and quick to prep.

A creme with lime, mint, and a small touch of coconut 🥥 🌴 🍹 hmm, its a nice dessert and all plant based, gluten-free. If you wanna take a step further, replacing sugar with a sweetener of your choice.

Make a fresh coconut cream with the coconut water and the fruit it's a good one for instance. Gotta get the young one, and they are really sweet.

Quiche de Polenta aux Sh*takes et Courgette.

Voilà, a Vegan quiche recipe without chickpea flour is one of the special kind. The texture is even better. Tastes great when it's cold. It holds so well and theflavour gets in even more.

Gluten free pie crust made with quinoa and brown rice, between crispy and chewy. Dust some corn starch it's easy to work with.

New street food brand

Holà, c’est notre New marque pour le street food -Bao un burger trditionement de Taïwan. Il est bien connu en Etat-unis et Londre depuis 2017. Maintenant il est finalement arrivé en France et fabrication artisanal avec du blé semi complet BIO de la France. Le bao bun est un pain cuit à la vapeur, il est mou et brioché. Avec trois savours different. les garnitures sont selectioné de Champignon melanger, Faladouce (falafel de patate douce), et steak Seitan. Saisonner avec l’épices et herbs fraîches menth, persil, basilique asiatique. Tout les Baos sont rempli avec un petit “CRUNCHY” croquant pickles de choux rouge maison comme choucroute, gingembre mariné, oignon fruite. Mais n’oublier pas la plus important et savouresux de les sauces maison et BIO de la France. La sauce blanche à la menth ou à l’épices paprika fumé. Sans lactose et sans oeuf.
