Last night I helped out a friend who was too ill to chef his job so after much refusal I took on an unseen multi-layered menu with a two hour drive both ways, to deliver a dinner for six! They didn’t want to go to a restaurant instead and twisted my arm to take on the job. Im so happy I did, they were the most delightful cool clients who at my grand age, had no idea who this beautiful singer / band / producers were. I’m now their biggest fan of course! Thank you Saskia Mills and Lexie Stoddart for your help in turning this event around in six hours.

S C A L L O P S wrapped in P A N C E T T A with a Pea Mint & Creme Fraiche Puree

1. Firstly cook you peas with in salted water and a sprig of mint then drain them off well.

Remove the sprig and add a couple of uncooked mint leaves and a large dollop of creme fraiche.

With a hand blitzed (or food processor) puree the ingredients. Set aside or put covered in the fridge until needed.

2. Take a rasher of pancetta and roll it tightly around the scallop, repeat until all are rolled. (Sometimes I put a sage leaf between the scallop and pancetta for that lovely flavour).

Put in the fridge until needed or continue.

3. Take a large non stick frying pan bring up to temperature so that the pancetta sizzles when you put them onto the base. Cook the first side for a minute or until golden(don’t touch them or prod them just let them go golden) then gently turn them over and cook the other side.

Reheat or using the warm puree, spoon a spoonful x 2 onto warmed plates.

Now place your scallops, one on top of each, give a pinch of black cracked pepper over as this lifts them and garnish with pea shoots.

SAUSAGE ROLLS

I’ve just written my method of making sausage rolls and bringing them back in the frame. We all love an eye popping canapés but, what better than a good old sausage roll. Party snacks with a delicious homemade, easy to assemble, loved by everyone, tummy fillers.

Thinking ahead to the next four weeks it’s a good time to start planning your list around who you’re entertaining, or, taking to a lovely drinks gathering.

Once you’ve made them yourself you won’t buy them again. They are super speedy and easy to make. (Cook thoroughly, when the pastry is golden and crusty to touch, your sausage meat will be cooked too).

CHRISTMAS!!! Yes!! The minute the calendar flips to December it will rollercoaster. Like with many things in life and certainly with catering, it’s ALL IN THE PREP. Be prepared and Christmas Day will be a doddle! It might be worth investing in a few tin foil trays with lids using the size that’s suitable for your numbers. Make your Dauphinois now ready to take out for Christmas Eve or to eat with left overs on Boxing Day. I doubt they’ll be any roasties left!

Well they are extremely labour intensive and using just tiny morsels of the finest produce I can get my hands on, they are the difference between shop bought at this time of year or getting the professionals in aka Annie Austin The Table Bruton and even then we are more than just a Canape!

We arrive with a gorgeous team, to set the scene, open the bottles, start shaking the cocktails and welcome your guests, take their coats and make sure they’re never without a drink. But it’s getting the flavour, the textures and the bursts of unexpectedness that delight and amuse the mouth. Amuse Bouche as they say. Have fun in the mouth! Plus of course the ART!
