Another week, another cake 🎂. This one, dark chocolate sponge, mousse, and raspberry compote, and pate de fruit. Finished with dark chocolate motto glaze and individual white chocolate raspberries!!

Classical piped wedding cake for Becka and Harry today. Lemon sponge filled with lemon curd, chocolate financier with chocolate ganache, and topped with Victoria. The hardest part is driving it to the venue!!

Upgrading another classic. This time the almond croissant!! What used to be a way of utilising day old croissants has been made into something far more luxury!! Crossed laminated croissants dough, filled with frangipan, almond butter and an almond cream!!

Some of the savoury croissants or pretty little pasties, I made for !!
‘The Chip Butty’ - dauphinoise potato, in cross laminated croissant dough, and deep fried for the ultimate combination of layer upon layer of flavour and texture, served with a garlic aioli 🤤!!
The ‘Pretty Little Pasty’ of Braised shin of beef, in a red wine sauce, with celeriac puree!!
A luxury Parmesan and truffle bow, filled with Parmesan and truffle custard!!
