SNEAK PREVIEW 💙🤍

A little peak of something a little blue...

Almost two weeks since I was back again at to set up this beauty for the lovely Rowan and Erin.

I'm definitely feeling a bit of the blues myself after a break away in the Spanish sunshine, but this very pretty cake is sure to brighten any day. I was straight back into a baking marathon of literally hundreds of chocolate brownies over the past couple of days, so now finally about to start to catch up on your emails, messages and enquiries, so thanks for your patience if you're awaiting a reply from me.

A STORY ABOUT STRAWBERRIES

I've always advocated that old cliché, "it needs to taste as good as it looks", as cake is ultimately for eating, after all. For me that means carefully selected quality ingredients and thoughtful flavour pairings at the core of every wedding cake, and if the ingredients are local and in season, then even better!

Berries are one of my favourite ingredients, and when summer comes around I'd eat strawberries every day given the opportunity!

My local surrounding area of Perthshire and Fife is particularly abundant in strawberry fields, with our long Scottish summer days providing ideal growing conditions for these juicy berries which seem to appear everywhere from June onwards.

I've even tried to grow strawberries in the garden myself, but my attempts haven't been that fruitful so far! I seem to have better luck with the tiny alpine variety strawberries, but the birds are getting to those before there are enough ripe at the same time for me to pick. Needless to say, I'll be sticking to buying my Scottish strawberries for now.

I'm always making various strawberry compôtes and jams to feature as fillings inside my classic vanilla bean sponge, as well as with my white chocolate and thyme mud cake.

When it comes to summer wedding dessert tables, there's no better way to showcase this fantastic local produce than strawberry topped individual meringues, and I have to admit, I also make an insanely decadent strawberry chocolate brownie. My gran used to make strawberry tarts, and I'm thinking a version of those could also be an absolutely delicious addition to a dessert table too!

When you can't rely on the Scottish weather, let your wedding cake and flowers bring all the early summer vibes.

Travelling over from the Middle East to celebrate their big day on the shores of Loch Tay, the Perthshire weather really could have been a little kinder to this lovely couple, but I'm sure all the colour brought plenty of extra warmth to their day nonetheless.

With an ombré effect across the cake tiers, faded out watercolour tones of hot oranges and hot pinks coordinated with L&D's invitations, and complemented their vibrant wedding flowers beautifully. A colourful and fun design with an elegant flair.

This beautifully fun and colourful ode to Spring really set the tone for Fiona and Grant's wedding day at last weekend.

Shades of pink and apricot orange, dressed with a relaxed arrangement of Spring florals and little buds about to burst open to life, all coordinated perfectly with the rest of the decor, table candles and the colourful floral arrangements by

Following a feast by , guests were treated to a delicious selection of cake flavours to curb all cravings, with tiers of coconut and passion fruit curd, sticky toffee and salted caramel sauce, and vanilla with basil infused strawberry compote.

Delve much further beyond the superficial exterior aesthetics of your wedding cake design, and think about transitioning the visual wow factor impact of your cake into an all round sensory experience for you and your guests to savour.

Of course, impeccable design and presentation, however that should look for you, is hugely important, but cake is ultimately for eating, and should be filled with nothing less than remarkable taste, texture and deliciousness.

Whether it's classic favours taken to the next level with fine ingredients and a little extra flair, or more unique pairings that linger a little longer on the palate, and take you on a momentary culinary journey... Deckled edges, muted colours, rough textured fondant, along with floaty petals and translucent "leaves", all came together perfectly to bring this cake to life, capturing the essence of the natural, earthy and rustic feel that Emily and Alex envisaged for their wedding cake design.

Soft greys for a nod to the groomsmen's charcoal coloured jackets, and pale sage greens to coordinate with the bridesmaids' dresses and table decorations.

The kitchen was filled with beautiful aromas with a lovely selection of flavours chosen for each tier: zesty lemon with homemade lemon curd, sticky ginger with Lotus Biscoff, and deluxe carrot cake with orange.

It was an absolute pleasure to create a cake so unique and full of tones, textures and movement, and with such a contemporary yet unpretentious look, proving that "rustic style cake" doesn't always have to mean "naked style cake".

5 REASONS WHY I ALWAYS DELIVER YOUR WEDDING CAKE

I was once asked by a couple if they could collect their tiered wedding cake to take to the venue themselves. I said no, and here's a few reasons why:

1. Driving with a cake on board is stressful. You're always worrying, is the car too hot, what if I have to brake suddenly and the cake slides and gets damaged, what if there's a traffic jam... And as for some of the rollercoaster roads to arrive at some venues, well, enough said... You really don't need that added stress on your wedding day.

2. I deliver most of your cakes boxed up as individual tiers with any additional decorations safely packaged separately too - largely due to the previous reason, that driving with cake is already very stressful. That means time is spent at the venue to carefully stack all the tiers, add the decorative finishes, and touch up any imperfections that may have occurred during the transportation, to make sure your cake is looking perfect for you.

3. Cakes are heavy. Never underestimate this. Although I said I prefer to assemble your cake at your venue, in some instances they need to be delivered fully stacked, with strategic use of a central dowel. However, this means that the cake is very heavy to carry. As an example, one of my recent cakes was over 13kg in weight, and that wasn't even a huge cake.

4. Timing. I always coordinate with you and your venue to arrange the best time to deliver your cake on your wedding day. Not so early in the morning that it's sitting out many hours longer than necessary, but not so late that I'm interrupting the order of your day. This usually means that I'm there setting it all up at a time when you're busy getting ready or at your ceremony, before arriving at your reception venue/room. How are you going to find time in your day to come and collect your wedding cake, and do you seriously want to spend your time doing this instead of soaking up the moments and making precious memories?

I LOVE TO EAT CAKE, BUT...

I'm also a self-professed chocoholic at heart.

My love of chocolate is what got me curious about the art and alchemy of chocolate, and took me on a journey to learn all about how to make these beautiful, shiny, handcrafted chocolate bonbons. That, and I also have to admit that I secretly love a technical challenge, and these little bites are no mean feat to master.

I love most sweets treats if truth be told, but there's something particularly alluring, decadent and luxurious about a box of artisan chocolates.

These bespoke wedding favour chocolate bonbons can be created in a variety of different flavours, using a selection of fine chocolate paired with delicious freshly made ganaches, caramels, pralines and fruit gel fillings inside. The shells can be painted with coloured cocoa butters, or even gilded with edible 24ct gold leaf for another level of refinement.

Timeless elegance with a modern twist, for a style that's sure to endure the test of time. They say there's beauty and sophistication in simplicity, and this stunning all white three tier wedding cake for Hannah and Sam proved just that, as it sat proudly framed in the window of Strathallan Castle.

When Hannah told me she was a lover of bows, I was delighted to feature a wide cut silk ribbon as the statement feature on the cake, with extra long length for delicate trailing tails.

With the cake being cut at the end of the drinks reception, slices of lemon, Belgian white chocolate and raspberry, and sticky toffee salted caramel cake were enjoyed as part of the dessert station, alongside a selection of my Belgian chocolate brownies and a cheese board. A perfect finale to dinner and the start of cocktail hour, leading the way to an evening full of celebrations under the backdrop of the beautiful Strathallan Castle!

An absolute pleasure to create this beauty for Hannah and Sam who travelled all the way up from London to celebrate their wedding in bonnie Perthshire, an area that holds dear to them.

5 REASONS TO LOVE AN ALL WHITE WEDDING CAKE

Whilst bright and colourful cakes make a beautifully bold statement (there are some coming up this year that I'm most definitely looking forward to creating), there will always remain a place for all white wedding cakes, and here's why I love them just as much...

1. They're classic and timeless, meaning they'll never go out of style.
2. Beauty in simplicity! Executed well, even the most simple looking all white wedding cake can be strikingly stunning.
3. They make a perfectly versatile blank canvas. Add a few flowers for a pop of colour to tie in with your overall wedding theme.
4. In the realm of wedding cakes, they're the master of understated elegance. Incorporate some subtle sugar crafted details, or even a silk ribbon or bow, for a classy and elegant finish.
5. They can be just as modern as they are classic. Some of the most contemporary cake designs are carried off best in an all white palette. Think minimalist chic. Alternatively, lots of textures and movement in all white for a paradoxically unfussy but elaborate style.

Bonus reason number six - there's something so very crisp and fresh looking that can only ever be achieved with an all white cake.

SPRING'S CALLING

Despite the gusty winds here in Perthshire over the past couple of days, there's definitely a glimmer of Spring with lighter evenings and daffodils making their appearance.

That also means there are lots of exciting wedding cakes on the horizon, and set ups at many beautiful venues, including some new ones for me this year that I'm looking forward to delivering your cakes to, including .

The shift into Spring also seems to be increasing momentum for wedding planning, with several new enquiries and bookings this week, which means I'll have my cake tasting boxes available to order again soon on the website.

REVITALISED

After a break away to recharge the batteries, enjoy some winter warmth and soak up the sunshine, I'll be swapping my shorts for my apron again on Monday morning.

The next few weeks are set to be filled with more consultations, cake designing, another phase of website development and some other business updates, all amidst my favourite backdrop of flour, eggs and chocolate and the familiar aroma of baking. It'll certainly be back to reality, but the reality isn't all that bad.

IT'S A MATTER OF STYLE

When it comes to booking your wedding cake, one of the most important aspects to consider before booking your cake designer is their style, and whether it aligns with you and your wedding cake vision.

We're talking about the way they create their cakes, the typical appearance of their cakes, and whether their cakes might usually have any distinctive design characteristics or distinguishing looks.

Here are a few starters to think about when considering if you're a good match:

💫 Do they have a more traditional and classic style with shorter tiers and rounded edges, but you prefer a more modern look with taller, slimmer tiers and sharp edges?

💫 Do they only ever create flawlessly smooth finished cakes, but you like the idea of lots of textures and movement?

💫 Are their cakes very polished and refined, but you fancy something much more relaxed, informal and rustic?

💫 Do most of their designs appear to be finished in sugarpaste and sugar crafted details, but your heart is set on a buttercream abstract design?

I will add a caveat that many cake designers won't strictly tick just one box, and some will even have quite a diverse style, but many will have a bit of a leaning and preference towards certain styles.

For me, I don't strictly have one specific very strong overriding style, however I definitely feel a natural draw towards certain looks and design characteristics, and I plan to lean into that much more. I'm learning that it's much more inspiring and enjoyable that way, and I'm almost certain that's where I'll create my best work and discover even more of my own unique and natural style.

That means, there's certain cake designs I just won't ever create... You'll never see a novelty superhero cake, tiers upon tiers of glittery sparkles, or those little tightly scrunched up ruffles on my grid - there's absolutely nothing wrong with them, but they're just not my style. Life would be boring if we all liked the exact same things anyway!
