THANK YOU to S**A Singapore UK Association (S**A) for giving us an opportunity to showcase our home cooked dishes ๐Ÿ’–๐Ÿ’–

It's a wonderful event we look forward to every year to meet many Singaporeans as well as people who are interested in our food and culture. We saw familiar faces and met new friends, who kindly gave us encouraging and supportive words ๐Ÿ’—

Almost everything we brought were gone, and we were totally surprised how swift our pandan tapioca pancakes went off the table so quickly!

There were many days many hours spent in the kitchen and many days after the event to recover ๐Ÿ˜† but it's all worth it.

We hope the food had brought back some good memories or had tantalized your adventurous palates :)

[ ANNUAL GATHERING CATERING ]

Many thanks to Bernard .chauly and Fiza ๐Ÿ˜˜๐Ÿ˜˜ for your confidence in me and recommending my kitchen to this group of friends who had lived in Malaysia/Singapore before, and gather every year with a feast.

To me, every catering event is exciting, as I am able to share some of my favourite dishes - Begedils, Nyonya Achar, Tofu Goreng, sambal eggs, Mee Siam Goreng, curry chicken, beef rendang, pulut hitam, pandan tapioca pancakes and blue pea coconut rice.

It almost felt like a Nasi Padang feast with the sambals, curry, and rendang. And a bit of Peranakan with the Achar, blue pea, and mee siam goreng.

And the pretty purple coloured pulut hitam and green pandan tapioca pancakes.

Like last year, we will be there again serving authentic Singaporean food.

[ BEST SUMMER BBQ ๐Ÿ”ฅ๐Ÿ”ฅ GET TOGETHER ]

Summer is over?!?!! Looks like there is still some last rays of sunshine today ๐ŸŒž๐ŸŒž

Every summer, our family friends in Cheltenham invite us to their lovely house for BBQ, it's the most look forward get-together summer event for us!

Our friend is Turkish and he marinates his meat in special Turkish seasoning. And even though they are in Cheltenham, they will drive all the way to London to get the best meat! As the meat was nearly done on the fire, he would place a piece of wrap over the meat skewer for a minute or two, and then used the wrap to grab up the meat, and feast! Such a brilliant way to enjoy the bbq at its freshest and hottest! We also love the Turkish rice which went so well with the salad and bbq meat.

Then our friend's wife, a Taiwanese, prepared Turkish tea ready to go with desserts. She baked the most mouth watering bakewell tarts, and served us Taiwanese pineapple tarts made by her mum in Taiwan! They had just returned from a trip to Taiwan. This is the first time I had tasted such fresh Taiwanese pineapple tarts, and beautifully wrapped too ๐Ÿคฉ I brought Tapioca Pancakes and Orh Nee (yam paste dessert) to share :))

And we were so blessed to be gifted a tin of Alishan Mountain Tea Leaves which they bought in Taiwan. Even in Taiwan, our friends were thinking of us ๐Ÿงก๐Ÿงก๐Ÿงก๐Ÿงก๐Ÿงก๐Ÿ˜˜๐Ÿ˜˜๐Ÿ˜˜

My heartfelt thanks ๐Ÿ™๐Ÿฅฐ to Jenny for having my kitchen in her ESEA Food Directory, where Four Winds Mahjong Club found me.

When I first heard about the mahjong club, my first thought was my mother. โ€˜Life is meaningless without mahjongโ€™ - mum always say. And so I had an impression this party will be full of aunties and uncles, but I was so WRONG!

Itโ€™s such a fun party with many young enthusiastic mahjong players. They have come together with a Crazy Rich theme, fancily dressed. And behind all these fun has an important mission - proceeds go to Centre151

My role in this party was to provide a family-style meal to 60 guests, which I am so thrilled to be selected among others for this charity event!

I want to thank for this opportunity and their entire team who have wholeheartedly supported me throughout this event. I also want to credit the lovely photos and videos from and ๐Ÿ™๐Ÿ™๐Ÿ™ last but not least, and always, my dear hubbyโ€™s support throughout.

For those who dislike deep frying curry puffs just like me, look here and try this hack! ๐Ÿ‘€๐Ÿ‘€

I'm not against deep frying, but I find deep frying curry puffs emit an extremely strong oily smell in the air. So I've been trying different ways of making curry puffs.

Last year, I tried using puff pastry. It was very nice. This time, I tried using frozen prata and it blew my mind away! Not just me! My daughter and son polished up the baked puffs in no time!

You won't get the same texture as a deep fried curry puff. It is totally different - it has a slight chewiness that resembles prata, and still somewhat flaky. Definitely tasted healthier as it is baked.

Soooooooo if you crave for a decent curry puff and cannot be bothered to make the dough, try using frozen prata :) and tell me if you like it ๐Ÿ˜€

This year, together with a few other vendors, I had the pleasure of catering for our fellow Singaporean's National Day Picnic Celebration at the Hyde Park. Thank you to SYNC group for taking me on this party, I love doing anything related to SG!

This year's picnic turnout reached more than 130 people, it sets a new record! Many enthusiastic Singaporeans and their family members turned up to picnic and chill in the nice weather, all feasting on their orders or simply home prepared food.

It was really heartwarming to see my regular customers, and to meet new ones. Apart from the picnic, I also had pickups from my home! Thank you to everyone who supported me in this event!! ๐Ÿ˜˜๐Ÿ˜˜๐Ÿ˜˜

If you know me, I'm not a baking person. The science of baking intimidates me after some unsuccessful attempts ๐Ÿ˜†

Hubby has asked for an orange chiffon cake for years ๐Ÿ™ˆ I finally got myself a mixer a few months ago, and here it is!

Orange chiffon cake is almost impossible to find in the UK. We have lots of Pandan chiffon cakes here though. Hubby was craving for this as it brings back that childhood taste.

Believe it or not, this is my first time making a chiffon cake! And I'm really chuffed to see it rise very well! It's light and airy, with a hint of orange, very happy with the texture and taste. Colour isn't vibrant because I refuse to put in any colourings.

Quite a little success โ˜บ๏ธ I will be making more chiffon cakes in the future! And experiment with different flavours, like black sesame! ๐Ÿ˜‹

Are you having any fun? Come and join us for a fun DIY popiah party!

In Singapore, families love hosting popiah parties, where guests prepare their own fresh spring rolls. It's very casual and fun. My family especially love it! I learnt this popiah filling from my mum, she stewed Cabbage, carrots, leeks, jicama, Tofu for the filling. Unlike those in the hawker centre, where only jicama is used. My mum said 'her way is sweeter'! I can't agree more! There is more robust taste when different veg are cooked together. It's really challenging to get jicama in UK, so I've substituted with turnips and it turned out perfect!

So making popiah is really laborious, lots of chopping and shredding. Roasting and crushing the peanuts and frying crispy soya mince to get that much loved crunch in popiahs. An array of ingrefients goes into a fresh spring roll - lettuce, sweet sauce, stewed veg, boiled egg, steamed chinese sausage, prawns, peanuts, soya mince. All the work is so worth it because the bite is just so satisfying!

My tummy always has space for desserts! What about yours?

In our coming supper club, there will be TWO desserts!! Everything ends sweet, but we are doing Double Sweet this time!

First dessert is the most unique Pandan Tapioca Pancakes. When I first introduced this dessert in my menu, many people have not heard of it except Singaporeans. In Singapore, this is mainly found in our Pasar Malams (or translates to night markets). Its fragrance and colour comes from Pandan juice, nothing artificial and no colouring. It is chewy and coconuty, it is addictive and mind-blowing!

Second dessert is Pulut Hitam, which is slow-stewed black glutinous rice with coconut milk. This is one dish that my mum and brother asked for everytime I go back to Singapore! Our pulut hitam is luscious (as described by our lovely customer) and has a creamy consistency that doesn't turn watery, some desserts turn watery after a while because of the use of cornstarch to achieve the creaminess.

So our Singapore Carrot Cake is not made of carrot? Once I was told to correct ๐Ÿ˜…

It is made of radish, or some call it mooli. Why do we say it's carrot then? It's because in our language, carrot and radish both use the same words, except we add the colour to the words to differentiate them. So radish is White carrot ็™ฝ่ๅœ, and carrot is red carrot ็บข่ๅœ.

And it is totally a savoury dish :) the "cake" is probably just a quick sound translate from our language "kueh" which means types of snacks.

Whatever it's called, it's undeniably a super delicious dish, and a really popular street food in Singapore. You will find this in most hawker centres, and serves two versions - white or black (fried with dark sweet sauce, hence black!)

Our supper club will be serving the white version, which is generously coated with eggs, accompanied by our customers' favourite homemade sambal balacan.

Easily thought as a simple dish, Fried Carrot Cake is actually a labour of love! It takes TWO days to make this dish. The first day is to cook and steam the cake, leave it overnight, and cook the actual dish on the next day.

So come to our supper club and savour this fabulously created street food, whether you are a Singaporean feeling homesick, or an adventurous diner seeking for some explosive experience!

[MEE SIAM GORENG]

When I moved to England more than ten years ago, I craved for Mee Siam so badly!! Itโ€™s a dish I must have every week back in Singapore!

Mee Siam is a breakfast favourite where flavoured rice vermicelli is served with spicy, sweet, and sour light gravy. The gravy, which I refer to as the Soul of the dish, is made from a spice paste that contains a lot of dried shrimps (shown on the second pic), fermented soya beans and tamarind.

One can anticipate the explosive taste by imagining the concoction of the above 3 ingredients. Especially important is the dried shrimps, that give the dish the ultra-umaminess!

It may sound like this dish is related to Thailand because of the word โ€˜Siamโ€™, and in Malay language, Mee Siam translates to Siamese noodles. But this dish is most probably originated from the Peranakans with Thai influence especially the usage of soury tamarind.

In our next supper club on 18th May at , you will get to savour this very unique dish in the DRY version. Mee Siam Goreng is the stir fried version using the same spice paste, served with king prawns, fried tofu, omelette, chinese chives, lime, and our homemade sambal balacan. As a dry version, every strand of vermicelli is infused with the strong punch of dried shrimps, spices, fermented soya beans, and tamarind. Mee Siam Goreng has been a constant favourite with our customers since 2019!

In Singapore, families love to do Popiah Parties, when an array of ingredients are brought together on the table and everyone wrap their own popiahs, itโ€™s a lot of fun! My family has this tradition and therefore I am bringing to you this fun and joyful DIY Popiahs! Lastly and never end a meal without sweet stuffs - Pulut Hitam and Pandan Tapioca Pancakes. Pulut Hitam is a slow stewed dessert made of black glutinous rice and coconut milk.
