In Singapore, families love hosting popiah parties, where guests prepare their own fresh spring rolls. It's very casual and fun. My family especially love it! I learnt this popiah filling from my mum, she stewed Cabbage, carrots, leeks, jicama, Tofu for the filling. Unlike those in the hawker centre, where only jicama is used. My mum said 'her way is sweeter'! I can't agree more! There is more robust taste when different veg are cooked together. It's really challenging to get jicama in UK, so I've substituted with turnips and it turned out perfect!
So making popiah is really laborious, lots of chopping and shredding. Roasting and crushing the peanuts and frying crispy soya mince to get that much loved crunch in popiahs. An array of ingrefients goes into a fresh spring roll - lettuce, sweet sauce, stewed veg, boiled egg, steamed chinese sausage, prawns, peanuts, soya mince. All the work is so worth it because the bite is just so satisfying!
