September is whizzing by already... though currently thinking I've been deceived and it's the end of October already... ❄️🌧️... grrrr... 4 degrees here in the sticks this morning.... 🤯 not good for the dahlias but here's a little shot of Mummy's birthday cake from yesterday.... beautiful dahlia varieties from , planted in May (pretty late) in a nice sunny border and now we are reaping the rewards. Go away rain and frost.!!!! #81

Coffee and Pecan cake! Right enough of this miserable weather (she says as the sun come out!) bake this and I guarantee you'll be feeling top top...! A nice loaf cake, not too icing-ly sweet. Make 2 and give one to a friend...or pop one on the freezer. I thank you. 🙏🏻 ☕️ lasts about 4 hours in our house..... 🤩

Makes 2 large loaf cakes
You will need 2 large(1lb)loaf tins lined with baking paper or paper loaf liners.
Preheat the oven to 175 °C / 350°F or Gas Mark 4
Ingredients
200g soft butter (or dairy free option)
200g sugar (use your favourite)
4 eggs (weighing about 180g) cracked into a jug
200g self raising flour
2tsp baking powder (not essential but gives a nice lift to the cake)
1tbsp strong instant coffee granules dissolved in 100ml boiling water
50ml cold milk
For the icing
150g soft butter
200g icing sugar
2tsp strong instant coffee granules dissolved in 50ml boiling water (make sure it's cooled down)
150g pecans (or walnuts)

Method
Measure out the butter and sugar into the bowl of a food processor. I use a Magimix 5200.

Process until light and fluffy, switch off and scrape the sides down with a spatula.
Switch on again and add the eggs gradually with the motor running. Switch off again and scrape the sides down.

Add the flour and baking powder and process for 5 seconds, mix together the coffee and milk and before add to the processor coffee and the milk and pulsing until just combined.

Remove the blade and scrape all the mix from the blade. Mix the batter with a spatula and then divide between the 2 tins.
Level off and then bake in the oven for 30-40 mins until the cakes are springy to touch.
Remove from the oven and allow to cool.

Turn out on to a tray or cooing rack and cold when it will be ready to ice.

To make the buttercream.

Clean the bowl of the food processor and add all the ingredients.
Pulse until all the ingredients are combined and scrape into a piping bag fitted with a nozzle or pop into a bowl and go freestyle with a knife- equally delicious.
Finish with pecans or walnuts.

Wow 😮- I landed in Sydney in October 1992 and the food scene was exploding there- fresh cappuccino coffee, funky Caesar salads, seared fresh tuna with mango salsa, fresh mayonnaise being made, King Island cheeses, Sydney rock oysters and lobsters, Wagyu beef..... 😮 Neil Perry and Rockpool- WOW this was cool!!!! I was working as a waitress and then 3 months in moved into the kitchen of a cafe in the city - the chefs suggested we go for "brunch" (usually it was for Yum Cha!) At the new cool place in Darlinghurst called "Bills.. " we had the best coffee ever and those ricotta hotcakes plus the most divine scrambled (folded) eggs, along with fab smoothies and the new invention of avocado on toast- I was a true Sydneysider.... living the dream.... Bill Granger bottled his magic and spread it across the world for everyone to have a piece of that unrivalled coolness.... I can't believe the news that having made London his home he now won't ever see his beautiful country again... hats off Bill.... might have to ditch the chicken pie for dinner and dish up something a bit more "BIll" 😞🥰🥰

Some shots off the pass from last nights 40th Birthday private dinner...guests enjoyed, a Japanese inspired bespoke menu with a couple of chef surprises.... 🥰🤩🥳🥂 1. Smoked salmon + dill sushi with wasabi +shiso 2. Seared tuna with sesame + schiracha mayo 3. Teriyaki chicken skewers with togarashi 4. spiced pumpkin velouté with Parmesan straw 5. Starter plate of handmade panko prawns with my sweet chilli jam, Seared Teriyaki scallops, Prawn pot stickers with soy + sesame 6. Asian style sweet pork belly with an Asian slaw +hoisin 7. Slow braised glazed Asian Short ribs, miso mash, creamed cabbage, roast pumpkin + crispy kale 8. Spiced mulled poached pears with spiced meringues, vanilla cream + dusted with pistachio powder 💫✨🤩

Happy Hallowe'en 🎃 Here's a quick recipe for those with a bit of time today...! Hallowe'en spiced biscuits

Makes about 12 biscuits

100g butter or diary free spread
50g black treacle or syrup
50g brown sugar

200g plain flour ( or use 150g gluten free flour)
½ tsp baking powder
2 tsp mixed spice or ginger

To decorate
100g icing sugar
Few tsp of water to get a thick but just pourable icing .
A piping bag or a tap to drizzle the icing.
Coloured Sprinkles- I used Golden Galaxy sprinkles

Equipment-Saucepan, wooden spoon, measuring scales, rolling pin (or a roll of cling film), parchment paper or baking mats, baking tray,
To make;

Weight the butter, treacle and sugar into a medium sized sauce pan and melt together over a low heat while you measure the rest of the dry ingredients.

Add the remaining ingredients and stir to combine. Stir until the mix comes together and forms a ball.

Allow to cool for a few minutes before rolling out in between 2 pieces of parchment, on a work surface using a rolling pin. The cookie dough will need to be a bit 1cm think.

Cut into various shapes using any cutters or even an upturned glass if you don't have any cutters. I used a gingerbread man cutter for a skeleton and a round cutter for a pumpkin and stuck a bit of cookie dough to make the green stem bit - get creative! 🎃
Place the cookies, using a fish slice or spatula, onto parchment lined baking trays and bake in a 175 degree oven for 10-12 mins until "just" cooked.

Allow to cool and decorate with icing and sprinkles.
Will last about 10 minutes. 💀👻🎃

Hello ! It's been a whirlwind couple of months and I've been cooking at some epic events this summer and yesterday's wedding was an even more special occasion but more on that later.... anyway Sunday called for fresh air and a change of scene from my home kitchen.... 👩🏼‍🍳had the most fabulous coffee and Italian inspired menu at the brainchild of - the in South Harting open for just 3 weeks! We ran in midst the thunder and lightening and the massive downpour that ensued - but was perfect after a ramble over Harting Down... lovely home wares and deli-items too- bravo Marianne... 🥰🎉sallyiddlesdiningexperiences

Behind the scenes here at SIFF Hq it is full on exams and revision timetables.... A-levels and GCSE's I've been a bit quieter... and mainly taking endless trips to the supermarket or performing emergency fridge raids! Anyway here are a couple of things that seem to go down well at home and will fit in to your Bank Holiday Monday. Serve with your bbq or just with some nice bread.

Whipped Feta
With burnt tomatoes and oregano

300g cherry or baby plum tomatoes, roasted in a hot oven or pan for 8-10 minutes, until just beginning to collapse.

1 x 200g pack Greek feta
150g Greek yogurt finest is fabulous
1 tbsp fresh oregano leaves.
Zest and juice of 1 lemon
A couple of twists of the pepper grinder

To finish
Greek olive oil is great or Lemon oil
Fresh herbs, like Oregano leaves, basil or tarragon

Put all the ingredients for the whipped feta into a blender or food processor... blitz until smooth and creamy and pour into a flat serving dish.
Add the hot tomatoes as you're ready to serve and drizzle with olive oil and scatter with the herbs.. I added some dollops of wild garlic pesto and some basil leaves. Finish with a grind of pepper..

Roast garlic, butternut squash and pomegranate

1 butternut squash
2 bulbs of garlic cut in half
2 red onions peeled and cut into quarters.
3-4 tablespoons of olive oil
Salt and freshly ground black pepper
1 pomegranate or a small pack of pomegranate seeds
2 tablespoons Pomegranate molasses
Fresh herbs or salads leaves

Wash the butternut squash and cut into 8 lengths and scoop out the seeds. Don't bother to peel them, just pop
in a roasting dish with the garlic bulbs and red onions and cook at 200 degrees for
About 40 minutes until the squash is soft.

Remove from the oven and allow to cool.
Place all the vegetables and any cooking juices in a serving dish, drizzle over the pomegranate molasses, pomegranate seeds and finding with a few fresh herbs or salads leaves...

you are a beauty 🥰-It's been a slow follow up to a busy first few weeks at HQ. But tonight it's for a very special birthday - no not #2's 18th but another family 60th birthday celebration. I'm finding it serendipitous that 2 of our family members are born on day, where we pause to remember the and the family members who were lost from Prague. ✡️
