I love to bake. It doesnā€™t come naturally to me, but I love the challenge, the smells that fill the house and the smiles a fresh baked bread brings to faces. Of all breads to bake, focaccia is by far my favourite. Iā€™ve always baked focaccia and itā€™s always been ok, but I recently got Paul Hollywoodā€™s book ā€˜bakeā€™ and tried his ā€˜Ultimate Focacciaā€™ (3 times) and it takes the end result up several levels. If youā€™re a good baker, or new to it, I highly recommended this book to you - you can thank me later. This time I made it simply with Kalamata olives and oregano. And lots of really good extra virgin olive oil and Maldon salt!

Chicken paillard. There is a butterflied chicken breast underneath the salad, marinated for 24 hours in really good extra virgin olive oil, garlic, lemon zest and juice and basil leaves. Heritage tomatoes slow cooked at 90c for 2 hours. The salad is dressed in the same mixture as the marinade with rocket, more basil leaves, caper berries, Kalamata olives, prosciutto and Parmesan. Light and lovely. Fried up the to sear the chicken! Lovely dinner on a warm eveningā€¦

Itā€™s been a doughy kind of weekend. Yesterday I made boa buns for the first time, today was a more familiar bake. Combined some home made confit garlic with olives to make a lovely focaccia! Havenā€™t baked for so long - really enjoyed it!

First ever attempt at making buns. Not perfect, but not bad, tasted great, really light and fluffy. Tomorrow Iā€™ll do some confit pork belly with black garlic dressing and some Taiwanese fried chicken. Inspired by . I used regular flour hence thereā€™s a slightly more more ā€˜goldenā€™ colour, instead of bleached boa flour. Mine looks more like Botox gone wrong, but Iā€™ll get there!

Kalamata olive bread, toasted in a pan with a little butter and olive oil, garlic, fiery red pesto, buffalo mozzarella, micro watercress and extra virgin olive oil. Need to think of a name for it, but it tastes bloody good - especially with a glass of Pinot!
