hornbeamcookware I waited a long time for this, the no.12 and the saying is really true, good things come to those that wait. Beautiful pan, the crust I got on my steak sear was mad! I’ve done lamb in it, pork chops, mushrooms, various veg. It’s just perfect.

How sad can life be. Married two weeks ago, 3 young children. Rest In Peace Diogo Jota. Condolences to his family, friends and to Liverpool Football Club and their fans. One of my wife’s favourite players… God bless.

Homemade Osso Buco with Risotto Milanese. One of my favourites to make and to eat!

You can’t beat best end lamb rack. In my humble opinion… and it has to be pink, so many times I see it over cooked. The fat has to be rendered down. Served with dauphinois and some asparagus or green beans. Or both of course!!

Biltong. I love it, but it’s expensive and the quality isn’t always great. So, I’m making it myself… been playing around with different meats - this batch is from really good quality rump. Changed the flavouring up, a bit more coriander and some chilli flakes. I’m loving it.

Fish and chips. Well, my take on it… Monkfish coated in live yeast batter. It goes all bubbly and frothy and tastes amazing and super crispy. Triple cooked chips, crushed minted peas, and warm tartar sauce.

Garlicky Chicken Couscous. Yum. carolinagelen, this is a killer recipe and I cannot wait to try some of the others.
I’ve never recommended a cookbook before - I have literally so many I have lost count. This book, Pass the Plate, is so easy to read, to follow. Excellent. Go and buy it, you can thank me later. Try this on page 77 and you’ll be hooked!

A little spin on a . I had no so instead used some . When rendering it, I added a couple of fillets. The flavour was good, a lovely different taste but probably a tad too salty! Nothing ventured, nothing gained.
