I’ve never recommended a cookbook before - I have literally so many I have lost count. This book, Pass the Plate, is so easy to read, to follow. Excellent. Go and buy it, you can thank me later. Try this on page 77 and you’ll be hooked!

Sunday ‘brunch’ - Croque Madame. Sourdough pan toasted in butter, Comte béchamel, baked French ham, melted Comte and of course - a fried egg. Remove the egg and you have a Croque Monsieur. Lovely and very filling. Can add some Parmesan for a bit of an extra punch, but I think a really good Comte is good enough without needing Parmesan (which isn’t exactly a French cheese, but that being said Gruyère is lovely on the Croques and that’s a Swiss cheese).

I love to bake. It doesn’t come naturally to me, but I love the challenge, the smells that fill the house and the smiles a fresh baked bread brings to faces. Of all breads to bake, focaccia is by far my favourite. I’ve always baked focaccia and it’s always been ok, but I recently got Paul Hollywood’s book ‘bake’ and tried his ‘Ultimate Focaccia’ (3 times) and it takes the end result up several levels. If you’re a good baker, or new to it, I highly recommended this book to you - you can thank me later. This time I made it simply with Kalamata olives and oregano. And lots of really good extra virgin olive oil and Maldon salt!
