Let’s talk CANAPÉS

They need to be punchy, beautiful, delicious and easy to consume in one hand.

Often a cliche, or beautiful but bland, we place special significance on them to give them the spotlight they deserve.

Our client wanted a menu that catered for as well as a special wine pairing for each morsel.

1, Vegan radish and shiso meringue, Madeira jelly and fried shiso 🍃
2, Beetroot and white balsamic relish croustade 🍠
3, Rösti with white crab, moscato grape and celery relish 🍇
4, Chipotle barbecue short rib on smoked onion taco 🌮
5, Pear crisp with cardamom cream 🍐

The recent cold spell has had us reminiscing about the glorious Christmas pop up .nineelms last month.

Keeping the residents and local community warm with our signature 65% Belgian dark chocolate with torched marshmallows, spiced mulled wine and handmade mince pies, all served from our new mobile bar and kitchen bike.

We recently settled on a name for her, to be announced soon. She’s having a little rest from all the festivities but will be back when the sun shines again, renewed and redecorated for the great British summer!

A delightful little simple side dish of butternut squash roasted in sweet and smokey spices, hot honey, fennel seeds and dill sitting on crème fraiche.

The sun is back out this weekend and we are finding it hard to let go of stone fruit season. 🍑

From peaches, nectarines, plums and apricots to cherries, these are some of our favourite seasonal fruits to work with.

Making the most of the late season we are turning these beautiful apricots from into a tart case to be filled with a toasted carrot compote and ginger gel. 👌

The last of our plums are being turned into a gel to top shards of meringue for an event next weekend.

For now we cheer ourselves up knowing our next love is on the horizon, citrus season! Watch this space 🍋

For most, what feels like the longest month of the year can be a dull drag. But not for us!

As my partnership with grows I’ve been privileged to work with a team of passionate and talented hospitality professionals. We’ve delighted guests with food crafted by a top tier of brand ambassadors including Michelin chef Shaun Rankin as well as head chef Maxine of Blanchette restaurant, Maxine.

Something different, clean and playful for a sunny day.

Raspberry and green tea meringue ‘floating clouds’ dipped in ruby chocolate topped with raspberry and hibiscus mascarpone raspberries, poached rhubarb and some simple decoration.

Here’s hoping this light treat kick starts spring. Thinking of naming this one “dessert in the clouds”. What do you think?
