A bank holiday weekend full of laughter, family and plenty of food celebrating a Golden Wedding Anniversary.

The family got to enjoy champagne and canapés in the garden before heading into the house for supper.

The menu for the evening was:

Canapés
~ Rare Roast Beef served on a Parmesan crisp with chilli and Basil
~ Quails Egg and Hollandaise Cups with Crispy Bacon
~ Truffle Figs with Pancetts and Gorgonzola on Crostini
~ Horseradish Blinis topped with Beetroot and Smoked Mackerel

I got my hands pretty dirty this afternoon making Chocolate Truffles for a celebration dinner this weekend but definitely worth it.

These rich indulgent truffles not only contained brandy but were coated in pistachio nuts, hazelnuts, cocoa powder and coconut.

These will last in the fridge for a week but won’t last that long after Saturday as they are too good.

What an honour it was to cater again for another special celebration for this gorgeous family.

Yesterday’s celebration was Sunday lunch for a 90th Birthday.

Champagne flowed all afternoon whilst enjoying a 5-course lunch for 20 guests.

We served the following:

~ Smoked Salmon Terine with King Prawns and Melba Toast

~ Chicken Piccata served with Dauphinoise Potatoes and Tenderstem Broccoli

~ A choice of either Summer Berry Pavlova or Pear Frangipane Tart

~ Cheeseboard

~ Tea, Coffee and Birthday Cake

Happy Easter 🐣

Recipe for the weekend. An easy, delicious, no bake pudding.

White Chocolate and Amaretti Cheesecake with added mini eggs on top for the Easter Weekend.

This version is gluten free. However, if you would like to make a regular cheesecake I suggest using biscuits of your choice either hobnobs, ginger snaps or digestive biscuits.

165g Gluten Free Hobnobs
60g Amaretti biscuits from Waitrose
80g butter
250g mascarpone
1 tbsp amaretto liqueur or 1 tsp Almond extract
300 ml double cream
300g white chocolate melted
Mini Eggs

To start bring the mascarpone out of the fridge 30 mins before using to loosen it. Butter the sides and base of a 20cm springform tin and add parchment paper to base.

Crush the digestives and biscuits in a food processor. Melt the butter in a small pan over a medium heat. Once it is melted turn up the heat slightly and cook until the butter smells nutty. Remove from the heat and add crushed biscuits. Mix well.

Press the mixture into the base of the tin and flatten. Put in the fridge to set.

For the filling melt the chocolate gently in a heatproof bowl on top of a saucepan filled with water. On a low heat melt the chocolate. Once melted leave to cool.

Beat the mascarpone until smooth. Then beat in the liqueur or extract.

In a separate bowl whip the cream until it forms soft peaks. Stir a little cream into the mixture to loosen it, then fold this mixture into the remaining cream. Gently mix in the chocolate.

Remove the biscuit base from the fridge and spoon over the white chocolate mix. Add mini eggs and return to the fridge for 1hr to set. Once ready to serve loosen tin and place on your serving plate.

Will keep up to 2 days without the mini eggs.

The sun made an appearance yesterday in what is the first day of Spring. What a difference it makes after what has been a tough winter.

Longer, brighter days are ahead of us, and plenty of seasonal fruit and vegetables to cook and enjoy over the next few months. 😊

Slow Cooked Ox Cheeks in Red Wine served with a Celeriac and Potato Mash and Cavolo Nero.

This hearty beef dish was a recipe by and was served at yesterdays shoot lunch. It was made the day before and slow cooked for 7hrs in the aga. By slow cooking the meat and chilling in the fridge over night the flavours improved immensely.

Today I started on a large freezer order for Christmas.

Chicken Korma, Chilli Con Came and Thai Green Chicken Curry were made. Lasagnes, fish pie and plenty more to cook.

I am going to put a couple of days aside before Christmas and will be batch cooking and filling peoples freezers locally.

I had the pleasure of cooking last night for a local friend who is getting married tomorrow.

Whilst family headed to the church rehearsal, Kate and myself got to work and assembled canapés and a kitchen supper.

Everyone then came back to champagne, canapés and a relaxed supper of Thai Green Chicken Curry, Jasmine Rice, Raspberry Chocolate Roulade, Treacle Tart and clotted cream. Finishing the evening off with coffee and Salted Chocolate and Caramel fudge.

This week started with me making a buffet lunch for a celebration of life.

Saturday night saw locals and friends come together for an 80th birthday party 🥂

The evening started with a concert at St James’s church in Ashmansworth followed by drinks and canapés for 60 people. Then 40 people came back to the house for supper.

Guests enjoyed:

~ Lamb Moussaka or Mac n Cheese served with a French Besn and Mange Tout Salad and a mixed leaf salad.

~ Blackberry and Sloe Gin Possets served with a Rosemary Shortbread
~ Chocolate Pots served with an almond biscuit.

Adults enjoyed champagne and canapés before sitting down to a cold buffet whilst the children had individual picnic boxes (not forgetting an ice lolly)
