My version of a paupiette steam cooked place and courgette filled with a lemon,orange prawn mousseline and topped with sweet crispy radish. Spice Arancini 👌 filling is ricotta Parmesan cheese,paprika and chilli flakes with a hint of orange and then coated with flower eggs and panco. Condemented with a sweet salsa which really gives the dish the perfect taste if you’d like the recipe or tips don’t be afraid to DM.

Competition day at the Celtic manor south wales the dish made was my own wild mushroom and truffle risotto with a powerful flavour and hopefully a flavour the judges won’t forget. it was a long day of waiting for my shot at the stage and enjoyed every minute of it and can’t wait to hit the stage again in 2023 thank you all for your support from your chef Korey Ball
