My healthy vegetable curry recipe 🫑

Ingredients
1 chopped red pepper
1 kg of chopped vegetables ( carrot, parsnip, sweet potato, butternut squash, cauliflower, )
1 chopped onion
2 garlic cloves finely chopped
2 tablespoon tomato puree
1 tablespoon mango chutney
2 tablespoon vegetable oil
3 tablespoon curry powder
1 tin coconut milk
1 pint of vegetable stock
1 handful of spinich
2 tablespoon cornflour

Method
Heat oil in a large saucepan
Add onion and garlic cook over medium heat until soft, add peppers and cook for 2/3 minutes, add curry powder and tomato puree, stir through and cook for another few minutes, add chutney, vegetable stock and coconut milk add all the chopped vegetables and cover with a lid and simmer- until vegetables are cooked . Add spinach and continue cooking for 5 more minutes
Mix cornflour with cold water and add enough to thicken the curry.
Serve with boiled rice and enjoy!

Healthy eating on a budget🍽
I wanted to share the recipe for my sweet potato and parsnip soup from the cooking demo hosted by Dromore health and well-being group. ✅

Sweet potato and parsnip soup
4 small / 2 large sweet potato - peeled and chopped
2 carrots 2 parsnip- peeled and chopped
1 onion - peeled and chopped
1 tablespoon oil
1 tablespoon curry powder
1 pint vegetables stock
1 tin coconut milk
------------------
Place oil in saucepan and heat
Add veg and cover with a lid - cook for 5/10 minutes or until veg has slightly softened
Add curry powder and toss veg in it.
Cover with vegetables stock and add 1 tin of coconut milk . Cover with a lid
Turn down Heat and simmer gently for 20/30 minutes until vegetables are all cooked . Bliz with a hand blender . Add black pepper to taste.
Enjoy! 🥣

RED VELVET CAKE🎂

Red velvet loaf cake ingredients🎂 125g butter 300g caster sugar 3 medium eggs 30g cocoa powder 1 tbsp red food colouring( I used a catering one which is strong, but use 2 tablespoons if its a regular one) 1 tsp vanilla extract 250ml buttermilk 300g plain flour 1tsp baking powder 1tsp bicarbonate of soda 2 tsp white wine vinegar CREAM CHEESE FROSTING 125g butter 125g icing sugar 250g full fat soft cream cheese 1tsp vanilla extract
