As well as being a chef, I am also a beekeeper. My hives are nestled on the edges of the rich and diverse landscape of the ’Suffolk Sandlings. I believe my honey gets its unique flavour as the bees forage on an array of trees, heather and wildflowers. Each season brings its own distinct flavour and colour.

I don’t treat or pasteurise my honey. Keeping it raw, healthy and natural.

My honey will soon be available to purchase.

Sea Bass Ceviche with citrus fruits, pickled wild garlic capers, red chilli, mixed herbs and a generous amount of extra virgin olive oil . The addition of wild garlic capers adding a burst of garlicky flavour.

I can’t get enough of this delicious mini pavlova with its marshmallow-like centre. Such a great pudding to show off the beautiful pink rhubarb that is available at this time of year.

I finally made Jenny Linford's Vin d’orange (orange wine). It’s a traditional Provençal aperitif made from wine infused with bitter oranges.

What a fantastic recipe to showcase this delicious colourful fragrant fruit. The recipe uses seville oranges , which are in season right now and wonderfully perfumed. So if you don’t have time to make marmalade, give this wonderful fruity aperitif a try.

RECIPE
Mix together 750ml rosé wine, 125ml plain vodka, 50ml dark rum and 200g caster sugar.
Slice 4 Seville oranges and 1 unwaxed lemon and place them in a jar together with 1 slit vanilla pod. Pour over the wine mixture, cover tightly and leave to steep in the fridge for 8 weeks. Strain through a muslin cloth or fine sieve, then store in clean, sterilised bottles in the fridge.

Every year I end up making far too much marmalade and let’s be honest, how many of you have a haul of marmalade still sitting on the shelf?!. So, this year I have been coming up with alternative ways to showcase this delicious colourful fragrant fruit.

Seville Orange Marmalade Frangipane Tart, shortcrust pastry filled with a layer of marmalade, topped with an almond frangipane, and toasted almonds. Perfect with a cup of tea/coffee or served as a dessert with some whipped creme fraiche or ice cream!

Keeping it seasonal with this delicious vegan salad. Muhammara is a middle eastern roasted red pepper and walnut dip, which is sweet, savory, smoky and lightly spicy in flavour. Usually served as a mezze, however I think it is incredibly versatile and can be served with a number of dishes.

This vegetable is not truly an artichoke, but a variety of sunflower with a lumpy, brown-skinned tuber that often resembles a ginger . This dish was so delicious I will be growing jerusalem artichokes in my kitchen garden this year !!

It can be cooked in much the same way as potatoes. roasted, sautéed, fried, or puréed into a delicious soup
