Early morning commute 5.30am some what different to wedding set ups!! -

The range of breakfast on the last day….. poached, fried and scrambled eggs and plain, maple bacon, blueberry and coconut pancakes to name but a few….. breakfast my favourite meal of the day!! Home now for a few days rest!! -

The last supper…. So to speak!! Vegan rice paper rolls with mango soy dip, smoked salmon with horseradish and beetroot crème fraîche; smoked mackerel with apple and chicory salad; followed by pancetta wrapped chicken on roasted apple mash; smoked haddock on parsnip mash with mustard seed beignets and for the vegans Moroccan tagine with jewelled cous cous. Puddings were particularly pretty tonight!! Vegan Eton mess with vegan meringues and marshmallows and raspberry macaroons with vanilla white chocolate ganache filling!! Just one more breakfast to go….. alarm at 5.15am better get to bed!! -

Second to last dinner!! Scallops on pea and mint with crunchy lardons, chicken liver parfait with onion marmalade and vegan spinach ravioli with pine nuts and zucchini followed by duck confit on green lentils, red gurnard on oregano potatoes and black beans with samphire and then finishing with vegan homemade berry sorbet, passion fruit and mango pavlova and chocolate nemesis with melted raspberries and meringue shards (thank you for gurnard and scallops!!). Meringues not happy in the hot and humid kitchen…. But such is life!! -

Day 4…… three tomato vegan salad with balsamic dressing, star anise roasted pears with dolcelatte cheese and beef carpaccio with truffle oil and parmesan shavings; cod on roasted tomatoes with celeriac cubes (thank you ), chump of lamb with fennel and butternut squash and vegan salt and pepper tofu stir fry. To follow dark chocolate truffle brownie with white chocolate ganache, treacle tarts with crème fraîche (thank you for the flowers) and roasted pears and plums in a ginger syrup….. now for bed!! -

What national relaxation day!! Ha! Vegan courgette and smoked aubergine stack, smoked trout mousse and pork balls with sesame and sticky soy; beef bourgignon, sea bream with crushed potatoes and olives and vegan stuffed peppers with wild rice and cheeze and to finish a vegan sticky toffee pudding with ginger caramel sauce and tiramisu with a espresso and Marsala jelly. Now the last few hour to relax!! -

A meal of three meats… last night smoked salmon parcels, chorizo and pork terrine and vegan fennel and beetroot carpaccio; followed by a roast beef, chicken, gammon and butternut roast with all the trimmings then to finish slow roasted white peaches; strawberry cheesecake and vegan chocolate mousse! Sunday dinner anyone?!! -

Just in case you think I am lazing my mornings away….. vegan blueberry maple pancakes, maple bacon pancakes, smoked salmon with scrambled eggs; full vegan fried breakfast and the aptly named Portland Grill!! Yum scrum -

Profiteroles and tarts…… the end point to a meal well received!! Baked Camemberts with onion marmalade; vegan beetroot and baby courgette salad and pheasant pâté; followed by pearl barley risotto, venison with baked apple (thank you ) and monkfish wrapped in pancetta (thank you ) and to follow a pair of tarts vegan blueberry and lime and plum and frangipane and for those with a sweet tooth salted caramel profiteroles!! -

Early evening supper…. fillet of beef, roasted butternut squash, beetroot and cherry tomato salad crowned with pomegranate jewels, late Jersey royals with herb butter and green beans topped with toasted hazelnuts to name a few!!
