A good tasting bowl of chilli is a must. How to make it vegan? Put beans and lentils in it, which makes it a high protein meal. A blend of those together with some veggies, all cooked in a rich tomato sauce, makes a perfect dish.
Served with basmati rice or even on its own will satisfy your taste buds and make that hunger go away.

This dish has a unique taste - a combination of salty olives and lentils cooked in a smoked sauce.
With the addition of soya mince, which gives a meaty texture, and bumps the protein concentration.
Served with either basmati rice or buckwheat groats it is a very satisfying meal.
A serving of 600 grams provides just under 800 kcal, over 27 grams of protein and just under 10 grams of so much needed dietary fibre.

Who doesn’t like some tasty curry? The funny thing is that the Indians don’t even know the word “curry” as it is a western concept of mixed spices. Nonetheless, I won’t be complaining about this, as I love these spices. I tend to use loads of Indian spices, as according to Ayurveda (India’s ancient medicine) they have healing properties.
I also have other curry-ish dishes in my offer.
This particular one has got sautéed carrots and potatoes with the addition of chickpeas and lentils for some extra protein. All covered in a curry sauce. Served with spiced Basmati rice.

Lecso or lecho (eng) is a traditional Hungarian thick vegetable stew. Usually prepared by sautéing onion and peppers in a sunflower oil or lard coming from the smoked bacon, which gives it this specific smoky flavour.
My vegan version of course contains sautéed peppers but in vegetable oil.
can't omit the smoky flavour, which is from the smoked paprika. I also add smoked tofu, for the "meat" taste.
Personally, I like it served with potatoes, but it goes well with rice and even a slice of good bread.

The third aspect of the "Firestorm - Vegan Catering" approach to food is "flavour and seasoning".
Let's be honest - while I love greens and vegetables, I don't want to feel like a rabbit eating lettuce.
I recently started watching Moby's "Punk Rock Vegan Movie" where musicians from the Punk/Hardcore scene talked about how bad it was to tour in the late 80s when there was no vegan food or no tasty or healthy Everything.
This stigma has been with vegan food for many years.
Some say they don't want to try plant-based foods because they are tasteless. I wonder how many carnivores eat raw or unseasoned meat? Does it taste good?!
So what is the solution? - fresh, dried herbs and spices.
This is what adds extra flavour and makes the dish tasty.
I use spices and herbs from different cuisines - Mediterranean, Indian, just to name a few.
In addition to enhancing the taste, herbs and spices have healing properties. In Ayurveda (ancient Indian medicine) they are actually the basis.

The second aspect of the "Firestorm - Vegan Catering" approach to food is "nutrition and satiation".
One of my goals is to make vegan food suitable for people who exercise hard and need "fuel" to maintain their fitness goals. Whether you're training for strength, endurance or general training, I make sure all my food has the right protein/carb/fat content.
In general, plant-based foods are nutrient-dense and low in calories. That is why they are such a good weight loss tool.
While I love salads, vegetable juices, and smoothies myself, I make sure I consume enough calories to meet my caloric needs.
So what does it mean?
I throw in some extra treats - good sources of macronutrients.
To increase the protein content, I add tofu, ground soybeans, and soybean chunks, which are excellent sources that are relatively low in fat and calories.
When it comes to fats, I usually use olive oil for frying and stewing, which is an excellent source of polyunsaturated fatty acids. I use coconut oil for some dishes, but I try to minimize the amount because it is a saturated source of fat.
When it comes to carbs, I choose complex carbs that provide good saturation.

The first aspect of “Firestorm - Vegan Catering” approach to food is “plant based ingredients”.
This is the pillar of my philosophy. Other aspects are also essential to create a delicious dish.
I won’t be bragging, too much, about why the plant based diet is good for you because there are loads of stuff you can find online. I highly recommend watching some documentaries on Netflix, like , and .
In terms of the nutritious superiority of a plant based diet, I will cover that in the “nutrition & satiation” post.
I may surprise you, but I want to cover the spiritual side in this segment.

If you are into , , , or you especially should pay attention not to consume any flesh as per instructions of the ancient texts. One of the important reasons is that you are taking on from the creature you have consumed.
These days the above mentioned practices are very popular, but most people, practising those, aren’t aware of the implications of meat consumption.
With the plant based diet also comes the concept of - the ancient Indian principle of nonviolence which applies to all living beings. It is a key virtue in Indian religions: Jainism, Buddhism, Hinduism, and Sikhism.
So next when you come out from a yoga class think twice if you want to consume a low fat lean chicken breast. A healthy dish of rice and split peas is a better option.

There is something magical about the number “Three”.
In Christianity, this number is represented in the Trinity - The Father / The Son / The Holy Spirit.
A similar concept exists in Hinduism, known as Trimurti - Brahma (The Creator) / Vishnu (The Preserver) / Shiva (The Destroyer).
In “powerlifting”, there are three main lifts: squat / deadlift / bench press.
At “Firestorm - Vegan Catering” I believe in the three areas, that will ensure the dish is tasty, nutritious and animal cruelty free:
plant based ingredients
flavour & seasoning
nutrition & satiation
Those areas are constantly interchanging and interacting with each other.
You could see a great looking dish, that will make your mouth water, but it will be made from highly processed foods and its nutrition will be crap.
Similarly, you eat salads, because they are healthy, but it is just raw veg, and you feel like a hamster eating lettuce.
That’s what I am aiming for with my dishes - this magical spot, where the balance is reached.

If you live in Derby or Derbyshire, UK and have struggled to find 100% vegan catering, fear no more!!!! Firestorm - Vegan Catering to the rescue !!!!!!
There are loads of other catering providers out there that offer plant based/vegan options, but as far as I know, they do meat options, so it means someone, at some point, has to handle “the carcass business”. If that doesn’t bother you, fair play, but if you are an ethical vegan, you probably wouldn’t like to deal with that.
In the next post, I will explain the philosophy behind meal preparation.
Yes, it is cooking, but it is more than that.
