A vegan vegetable frittata is a fantastic way to use up leftover veggies. Here’s a simple recipe you can follow:

# # # Vegan Vegetable Frittata

# # # # Ingredients:
- **1 cup** chickpea flour (gram flour)
- **1 1/4 cups** water
- **1/4 cup** nutritional yeast
- **1 tsp** baking powder
- **1/2 tsp** turmeric powder
- **Salt and pepper** to taste
- **2 cups** mixed vegetables (e.g., bell peppers, spinach, zucchini, onions, mushrooms)
- **1 tbsp** olive oil (for cooking)
- **Fresh herbs** (e.g., parsley, chives, basil) and **dried herbs** (e.g., oregano, thyme) to taste

1. **Preheat Oven**: Preheat your oven to 190 C,

2. **Mix the Batter**: In a bowl, whisk together chickpea flour, water, nutritional yeast, baking powder, turmeric, salt, and pepper until smooth.

3. **Prepare Veggies**: Chop your vegetables into small pieces. You can sauté them in olive oil for about 5 minutes to soften them, or you can add them raw if you prefer a crunchier texture.

4. **Combine**: In a large mixing bowl, combine the vegetable mixture with the chickpea batter. Add fresh and dried herbs.

5. **Bake**: Pour the mixture into a greased baking dish or a cast-iron skillet. Bake for 30-35 minutes or until the top is firm and slightly golden.

6. **Cool and Serve**: Let it cool for a few minutes before slicing. Serve warm or at room temperature.

Jet wandered in one day and immediately captured all our hearts with his gentle nature. And that was before he decided to give everyone a head massage while they were lying in **Shavasana**!

As comes to an end, I feel so grateful for the fantastic 8 days spent with beautiful souls. What a bonus to have them practicing on my body! 😁

We shared so many laughs, had endless conversations about just about everything, and made meaningful connections. Plus, we even made it to the beach and enjoyed healthy, nourishing foods!
