Beef & Guinness Stew

Deep mid-winter is a time for luscious stew that warm you through, hold you tight and make you sink into deep bowls of beefy goodness. Browned shin cheek, with some bone marrow thrown in for souped up silkyness, were the base for this Beef & Guinness Stew. Lighter than most versions that we've made, with a chicken stock, highlighted the flavour of our favourite stout, and the addition of tomato paste along with carrots rounded off the bitterness with some sweetness.

Served with etheral mashed potatoes to soak up all that gravy - make sure you rinse your tatties of their starch, cutting them into inch cubes to boil until falling apart. Don't over work the mash as this breaks up the cells and releases starches, making it gloopy. Heating the butter and milk together also keeps things nice and light

We're able to make a number of one-pot style dishes and sides like this for smaller private catering events, or just if you want something delicious and can't be bothered to cook!

Fried Chicken

I've been having a bit of a craving for fried chicken recently, but south London's establishments can often be somewhat disappointing, so I decided to russell up my own!

Having not made it in a while it gave me the opportunity to tinker with the dredge adding rice and corn flour to help give an extra crispy coating.

Pork & Butternut Squash in Coconut milk

With the troops all back to work and school I wanted to give them a midweek feast to raise the spirits. This Asian inspired stew was comforting and warming for the coldest week of winter so far, but with a tropical vibe from the coconut milk and lime promising of sunnier days to come.

We're now taking bookings for this year, and dates are getting filled up, so if you are planning a party, do get in touch and let us take all the hard work of feeding people off your hands, whatever the weather!

Happy New Year

The holiday season is a busy time of year for us, but we're now getting an opportunity to catch our breath before throwing ourselves into 2025. Thank you to all of you for your support and helping to make a fab 2024.

This stew had distinct cajun vibes, with the holy trinity, smoked sausage and thyme, topped off with a generous swirl of a mustardy creme fraiche. A wonderful warmer on a cold winters day.

Pasta & Meatballs

It's always worth going the extra effort to make the Meatballs yourself. Equal mix of pork and beef, with a bit of ground fennel keep these nice and light, whilst some breadcrumbs not only help bind the mixture they also help soak up the fats from the meat and stop it becoming 'mealy'.

Thicker tagliatelle noodles also provide more surface area for sauce too cling too with extra bite.

Chicken & Dumplings

One of the upsides of the colder weather is that making pots of heart warming deliciousness are always welcome.

This one pot ticked all the right boxes. Robust and hearty with a souped up chicken broth to rival restorative chicken noodle soup; poached chicken that was succulent for shredding, wholesome carrots and delicate, soft, as fluffy as a pillow drop dumplings.

Cajun Roast Duck

The late fall, start of winter signals the start of Duck hunting season in Louisiana, and these slow roasted duck legs are wonderfully soothing as the cold winter nights start to draw in.

The rich meat is deliciously accompanied by sweet slow cooked green beans, toothsome long grain rice and lettuce leaves in a simple vinegarette.

Pork Filet on a bed of roasted swede and bacon, with a mustard seed and honey sauce

I love this for all the contrast of textures and flavours with the sophistication of feeling a bit cheffy whilst also hitting the comfort food buttons too.

J1 certainly agreed, exclaiming "Michelin ⭐️⭐️⭐️, Mister D" as he wolfed down his 2nd plate.

Beautiful BBQ!

We've had a wonderful summer, and we're celebrating the end of it with bar this Saturday (31st!)

Head down and try a selection of our slow smoked meats, including 24hrs smoked Pulled Pork, succulent BBQ Chicken, and coffee-paprika rubbed brisket (The King!), as well as a selection of classic Southern sides! All washed down with some sublime cocktails from our discerning hosts!

This sophisticated, but slutty, canapé captivated me for the contrast of the caviar topped anchovy sour-cream dolloped on top of a (not so) classy pringle.

Remarkably tasty with the contrast of flavours and texture. Salty caviar popping in your mouth alongside a crunchy pringle!

We've been slinging out our BBQ at numerous weddings, corporate events and summer fairs, but have been missing the good people of SW17 and it's surrounds.

So we've teamed up with our friends , who will be running some drinks specials to pair perfectly with out pulled pork and brisket, to have a BBQ pop-up special and help banish those end of summer blues in their glorious courtyard!

Tortilla Espanola

An impromptu trip over the weekend to Tooting Lido meant that a quick picnic needed to be rustled up to make sure that snacks were at the ready after a refreshing swim.

Paired with new creation Pulled Pork Paratha, it was perfect after a cold dip!

Euro's prediction? What's yours? See ours in the comments!

With it being mid-summer peak season, moving into a commercial kitchen and the Euro's it's proving to be not enough hours in a day and days in the week at the moment.

Desire for comfort food is high, combined with convenience and quickness, so that we can at least grab a bit of time to, ahem, "enjoy" watching England 🏴󠁧󠁢󠁥󠁮󠁧󠁿.

So a football dinner was crafted with a quick run down the supermarket aisles, mixed in with some pro moves to pimp up this beauty 🍔😍👌

Large slices of salad 🥗 🍅 🥗 made feel at least this was at least a half-way attempt to eat sensibly

💥 McDondalds style buns swiped with mayo and grilled for a perfect bun
💥 Supermarket Quarter Pounder smashed thinnly, salted and sprinkled with mushroom powder for extra umami
💥 Onion 'steaks' grilled flat, placed on the patty and topped with cheese
💥 Thick pickles for crunch and tang, thick vine tomatoes for a bit of sweet texture, and crisp clean 'shrettuce'
💥Topped with a mix of Tommy K and finishes it of with a sweet, creamy, vinegary warmth which makes me think we could be on to something.

Frogmore Stew

After seeing smash through a spread of prawns, corn and mac & cheese, I knew I had to revisit this old favourite!

Frogmore Stew is from the Low Country, but seafood boils are found throughout The South, and make great celebration food! Tasty, easy and with lots of different bits, this is food to please a crowd!

Corn, smoked sausage, potatoes and a collection of seafood (just prawns on this occassion) are simmered in water, stock or beer, and seasoned with a spice mix. We used the classic Old Bay, but there are countless varieties, or you can make your own.

Great party food, a table is layered with old newspaper, before the drained contents are strewn across ready for everybody to dive in!
