Cajun Roast Duck

The late fall, start of winter signals the start of Duck hunting season in Louisiana, and these slow roasted duck legs are wonderfully soothing as the cold winter nights start to draw in.

The rich meat is deliciously accompanied by sweet slow cooked green beans, toothsome long grain rice and lettuce leaves in a simple vinegarette.

Pork Filet on a bed of roasted swede and bacon, with a mustard seed and honey sauce

I love this for all the contrast of textures and flavours with the sophistication of feeling a bit cheffy whilst also hitting the comfort food buttons too.

J1 certainly agreed, exclaiming "Michelin ⭐️⭐️⭐️, Mister D" as he wolfed down his 2nd plate.

We've had a wonderful summer, and we're celebrating the end of it with bar this Saturday (31st!)

Head down and try a selection of our slow smoked meats, including 24hrs smoked Pulled Pork, succulent BBQ Chicken, and coffee-paprika rubbed brisket (The King!), as well as a selection of classic Southern sides! All washed down with some sublime cocktails from our discerning hosts!

This sophisticated, but slutty, canapé captivated me for the contrast of the caviar topped anchovy sour-cream dolloped on top of a (not so) classy pringle.

Remarkably tasty with the contrast of flavours and texture. Salty caviar popping in your mouth alongside a crunchy pringle!

So we've teamed up with our friends , who will be running some drinks specials to pair perfectly with out pulled pork and brisket, to have a BBQ pop-up special and help banish those end of summer blues in their glorious courtyard!

Euro's prediction? What's yours? See ours in the comments!

With it being mid-summer peak season, moving into a commercial kitchen and the Euro's it's proving to be not enough hours in a day and days in the week at the moment.

Desire for comfort food is high, combined with convenience and quickness, so that we can at least grab a bit of time to, ahem, "enjoy" watching England 🏴󠁧󠁢󠁥󠁮󠁧󠁿.

So a football dinner was crafted with a quick run down the supermarket aisles, mixed in with some pro moves to pimp up this beauty 🍔😍👌

Large slices of salad 🥗 🍅 🥗 made feel at least this was at least a half-way attempt to eat sensibly

💥 McDondalds style buns swiped with mayo and grilled for a perfect bun
💥 Supermarket Quarter Pounder smashed thinnly, salted and sprinkled with mushroom powder for extra umami
💥 Onion 'steaks' grilled flat, placed on the patty and topped with cheese
💥 Thick pickles for crunch and tang, thick vine tomatoes for a bit of sweet texture, and crisp clean 'shrettuce'
💥Topped with a mix of Tommy K and finishes it of with a sweet, creamy, vinegary warmth which makes me think we could be on to something.

Frogmore Stew

After seeing smash through a spread of prawns, corn and mac & cheese, I knew I had to revisit this old favourite!

Frogmore Stew is from the Low Country, but seafood boils are found throughout The South, and make great celebration food! Tasty, easy and with lots of different bits, this is food to please a crowd!

Corn, smoked sausage, potatoes and a collection of seafood (just prawns on this occassion) are simmered in water, stock or beer, and seasoned with a spice mix. We used the classic Old Bay, but there are countless varieties, or you can make your own.

Great party food, a table is layered with old newspaper, before the drained contents are strewn across ready for everybody to dive in!

Wedding @ Tower of London

We were very privileged to cook our BBQ for a wedding at The Tower of London 🏰. A surreal experience, including watching the bride being given a guard of honour by the beefeaters across the courtyard, wandering around soaking it all up after the tourists have gone home, and driving through drawbridges and around the castle at night with just a lone guardsman 💂‍♀️ on sentry duty.

A BBQ platter of 24hrs smoked pulled pork, BBQ chicken and sides of succotash with prawns, mac & cheese (got totally smashed before photography) and black-eyed pea salad was devoured whilst a few beers were enjoyed in the Tower's very own private pub, resplendent with lots of memorabilia and lucky ravens. Can you guess what gin they served?

Moroccan Mince Beef with red peppers & chickpeas

Minced Beef is a great and cheap ingredient but boy does it get boring making countless spaghetti Bologneses'!!! This Moroccan inspired dish was a lovely alternative way to use up a stray packet!

💥Onions were lightly fried until golden with lots of cumin
💥Plenty of spices added such as paprika, harissa and corriader after browning the mince 💥Chopped Tomatoes and beef stock to give the dish plenty of body
💥Gently simmered with red peppers and chickpeas
💥Served over cous cous, with some grilled courgettes

Steak

I've been party to lots of conversations on steak and the lengths that people go to in search perfectly cooked steak; many of which involve all sorts of esosteric treatments, rituals and juju. I find that a lot of it is just tub-thumping but here are a few tips that I hope help you achieve carnivore heaven.

💥Good Steak - it doesn't have to be filet (horrendous waste of money), but do try and find meat that is a nice dark red'y-purple colour and has some marbelling. Even in the supermarkets you can score some good stuff!

💥Simple Seasoning - take your steak out about 20 minutes before you want to start cooking, and liberally season with salt and a smattering of pepper, so that the salt will penertrate the surface and will help form a nice crusty when it hits that hot pan

💥Hot Pan or Griddle - get this motherf@£%&r HOT 🔥 🔥🔥🔥. This will help sear the meat, create a cracking crust full of flavour (Maillard Reaction) and get things cooking along nicely.

💥Meat Iron - an Iron weight to place on top of the steak to help get that surface area up close and personal with the plate and get maximum Maillard where all the flavour is.

💥Meat thermometer - best piece of kit in the kitchen and takes all the guess work out of it. About £8 on amazon. Will give you perfectly cooked steaks every time. Take off at your preferred temp. We do 125-130F and get perfectly rare every time.

💥Butter - a smear of butter on each side and a quick turn for a minute so it does wonders on the yum 😋. Butter makes everything better and it does here too!

💥Resting - let it hangout for 5 minutes - I know you just want to dive in, but the reward is worth it

Cook it to what ever way you want, just don't cremate it

And for the squeamish, it isn't blood!

Hot Dog, Cabbage and Potato Stew

Regular readers (hello both of you!), will be well aware of my love for any kind of stewed, soft potato, as well as a dish that packs a punch that is more than the sum of its parts. This stew most certainly hit both marks!

With just six simple ingredients, that any one can put together in next to no time, deep bowls of a soulful stew were being inhaled for an uplifting supper.

💥Hot dogs aren't just for 🌭🌭🌭!!!
Chunkily chopped our Chicago Style Beef Hot Dog from @, which gave smokey substance to the body of the broth
💥Onions and garlic are sauted till golden to help build a solid base
💥Cabbage, Potatoes and Dogs added and coated in the onion mix; season with pepper
💥Add Chicken Stock, cover and simmer till potaotes are tender and about to fall apart but keeping their shape - About 1hr.

Chicken Bog

This delicious Low Country fish, a close cousin to Jambayala, is usually served as a hearty side. But with lots of shredded chicken and smoked sausage, with think this can be enjoyed as a main all on its own! We also paired it up with a delicious corn puree, and some wilted green to make a real meal out if it. A splodge of hot sauce really set it off!

A busy week next week sees us at for the latest Six Nations Saturday. It's always busy, so do DM so we can grab you a table

Thursday sees us supporting with our delicious BBQ, who are hosting a captivating book reading by Booker nominated bestselling author Karen Joy Fowler (Jane Austin Book Club) from her book 'We are all completely beside ourselves'. Hands up if you love garlic??!!

If you do you will love this beautiful Puerto Rican celebration dish. Traditionally eaten on Christmas Day, it knocks the socks off a Turkey, and i can't wait to smoke one on the BBQ!

💥 Puerto Rico's national dish is a world be**er, one of the best things I've eaten
💥Marinated with lots (and I mean lots) of garlic, as well as oregano, thyme, cumin and ancho chilli, with a squeeze of orange & lime juice
💥 Leave to hang out for at least overnight, but the longer the better. We did ours for three days
💥 Slow roasted until internal temp hits 195F, and you can carve into chuncks or pull
💥Roast Potatoes were amongst the best I've done. Perfectly chuffed, with crispy cut glass outsides and fluffy insides. Pork dripping added to really turn up the flavour
💥Served with a clean salad with just a drizzle of lime-corriander dressing, and some slow cooked black beans with peppers

We will be most definitely adding this to our catering menu and will probably make an appearance at our pop-ups too!

We're taking a break next week after being at the Belleville Taproom for the Six Nations. Thanks to those that have been to see us, as well as lots of new friends! If you've missed us so far, we'll be back for the last two Saturday's on the 9th & 16th March!

Red Lentil & Carrot Soup

The bit between Christmas and New Years is no man's land. You need a recovery between all the feasting. A pot of soup bubbling away all afternoon; flavours melding as they simmer away certainly aids that healing. This soup sang to all parts of the soul, using lots of left-overs and store cupboard ingredients from the previous weeks festivities.

It also meant I got to play with my favourite kitchen toy too! The immersion blender!
